The breakfast recipe is the best! I think we can all agree that they are great at any time of the day and are perfect for meals and gatherings-even holidays.
We have been long-time fans of breakfast casseroles, and today I want to share a new casserole breakfast casserole with bacon and sausage, it’s amazing!
Our cookie egg casserole and breakfast potato casserole are our favorites, but will add it to the list because it is simple and delicious. Oh yes-and it’s delicious!
We have made the classic Tater Tot casserole one of our favorite side dishes, and know that the breakfast version will be delicious-and it is.
How to make IT
From start to finish, this recipe can be completed in about 10 minutes using some shortcuts. This casserole requires bacon and sausage. It is easier if you use pre-cooked bacon and pre-cooked chopped sausage.
Potato wedges. After preparing the meat, you will arrange the French fries in a single layer in a greased baking pan.
Mix the eggs. Make an egg mixture by mixing eggs, milk, salt, pepper, half of bacon, sausage, and all ingredients except a cup of cheddar cheese. This will be poured on the mashed potatoes.
cheese. We sprinkled more mashed potatoes on top and bake them for about 40-45 minutes. From there, we took it out, added more cheese, and put it back in the oven for 5 minutes.
Toppings. Put the remaining bacon and some onions on it and let it sit for at least 5-10 minutes before digging in.

This dish can be easily changed according to your preference. You can replace cheese or even meat, or add any other ingredients, such as onions or peppers. For example, the Mexican version can include some chopped onions, green and red peppers, and Colby Jack cheese instead of cheddar cheese.

Can you make this in advance? This dish is already easy and quick to put together, but it can also be made in advance. Just follow the instructions, but store the egg mixture in an airtight container 24 hours in advance.
Pour it on the child before baking and follow the instructions to finish cooking.
How to store/reheat tater tot breakfast casserole? Place in an airtight container and store in the refrigerator for up to 4 days. If you want to freeze this casserole, place it on a freezer-safe plate, cover tightly and freeze for up to 3 months.
You can let it thaw in the refrigerator overnight and then reheat it in the microwave. You can also freeze single servings and reheat them for a quick breakfast.

- 10 ounces chopped sausage
- 1 pound bacon
- 1 32 oz. Bag Tater Tots
- 12 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 cup shredded Monterey Jack cheese
- 2 cups cheddar cheese, chopped and divided
- Green onions
Preheat the oven to 350.
Boil the bacon in a pan and then crush it.
Arrange Tater Tots in a single layer in a greased 9×13 pan.
Whisk together the eggs, milk, salt and pepper. Stir in the sausage, half of the bacon is crumbled.
Add 1 cup Monterey Jack cheese and 1 cup Cheddar cheese and mix well. Pour on the mashed potatoes.
Sprinkle with extra small pieces and bake for 40-45 minutes.
Remove from the oven, put the remaining cheese on top, and bake for another 5-7 minutes.
If necessary, let stand for 10 minutes before cutting, and then top with remaining bacon and green onions. Serve hot.
