Have you ever eaten sweet potato chili? I love this recipe variation. There are many ways to make a good chili, but sweet potato cubes take this chili to a whole new level of deliciousness! Sweet potatoes go perfectly with all the spices, tomatoes, beans, corn and ground beef. This is a big bowl of YUM. When the outside is a little crispy and you or your family want something cozy and warm, you’ll want to try this recipe.
Another idea is to make this chili completely vegetarian by taking out the ground beef. It still tastes incredible thanks to the sweet potato chunks. The perfect Meatless Monday dinner idea.

How to Make Sweet Potato Chili
Get ready to love how easy this sweet potato chili is to make.
Potato. Peel and cube sweet potatoes. Put ½ cup water in a microwaveable bowl and cook for 4 minutes, until tender. Place sweet potatoes, tomatoes, ketchup, water, and all seasonings in slow cooker and cook on high for 2 hours, stirring occasionally.
beef. Place beef in large frying pan over medium-high heat. Drain and discard any excess grease.
Cook. Add cooked ground beef, black beans, and corn to the slow cooker (use the liner for easy cleanup!). Cook for another 1-2 hours (stirring occasionally) until the flavors come together.

Toppings: The soup is delicious on its own, but you can definitely spice it up with a few toppings. Some favorites include:

- Jalapeno Chips

roof: I love filling my house with the scent of soup in a crock pot on cold days, but sometimes I need to be able to make a quick dinner. Prepare recipe as directed, except add ingredients to large pot. Bring the mixture to a boil, then reduce the heat to a simmer.
- If you don’t like black beans, you can use kidney beans or pinto beans.
- Add more vegetables like bell peppers or onions.
- Replace ground beef with ground chicken, turkey, or even sausage. You can also ditch the meat entirely.

Make sure the peppers are completely cool before pouring them into a freezer-safe container. If properly frozen, this pepper will keep for 6-12 months.
