Soup season is our favorite! Whether it’s cheesy potato soup or cheesy cauliflower soup, we love to enjoy these recipes all fall and winter – especially when cheese is involved!

We know it’s a hit, and this recipe is not only super tasty, it’s also super easy.
If you’ve ever been to the Pacific Pier Cafe at California Adventure Park in Anaheim, you’ve probably tried their Bread Bowl Broccoli Cheese Soup. If not, you must try it – it’s just heaven!
Well, we’ve been to Disneyland and California Adventure recently and I’ve been dying to find a recipe that rivals this little slice of paradise. I’m happy to report that my mom was able to do just that. She made some changes to the original recipe and I have to admit it is one of the best recipes I have ever tried!
It tastes just like Disney’s Broccoli Cheddar Soup – and it’s super easy!
We’re big fans of Disneyland food and have made several copycat recipes, including Dole Whip and Bacon Wrapped Asparagus Skewers. This Broccoli Cheddar Soup recipe tastes just like the Broccoli Cheese Soup at Pacific Pier Cafe at California Adventure!
How to Make Broccoli Cheese Soup
Believe it or not, this recipe is easy and delicious. It only takes about 30 minutes to put together, and the ingredients are super simple. In fact, you probably already have most of them. Soon you’ll have a taste of the happiest place on earth in your own kitchen. đ
I don’t know what the broccoli and cheddar pairing is, but this soup is the ultimate comfort food – especially on a cold day.
thickened. Add flour or cornstarch to the soup to thicken it. To do this, simply stir a few tablespoons of cornstarch into a small soup in a separate bowl before adding it to the mixing bowl. This will help thicken the whole soup.
Use another cheese? Our recipe calls for cheddar and swiss cheese. You can easily swap them out for white cheddar, parmesan, jack or American cheese. All of these options will taste delicious!
Crock Pot Instructions
Put the butter and flour in your crock pot and let it melt. Add milk and let stand for 30 minutes. Add remaining ingredients but cheese. Cover and cook on high for 2 hours or low for 4-6 hours, adding cheese 30 minutes before done.
Storage Tips
Whether you keep it in the refrigerator or freezer, let the soup cool to room temperature before storing.
refrigerator. Pour into an airtight container and refrigerate for 3-4 days! Reheat in the microwave or on the stove and serve with some crusty bread. Ok! !
refrigerator. Broccoli Cheese Soup is actually great for freezing! Once cooled, pour into freezer-safe bags/containers. Store soup in the refrigerator for up to 6 months!
You can even make individual treats by pouring into paper/plastic cups, freezing and removing from cups after freezing. Store frozen individual servings in freezer-safe bags.

This is absolutely the best homemade broccoli cheddar soup I’ve ever tried! ! Now, I just have to find some super delicious sourdough bowls to eat this soup with and maybe I’ll feel like I’m back at California Adventure!

- 29 ounces chicken stock (2 cans)
- 1 small crown broccoli chopped
- 1/3 cup flour
- 1/4 cup butter
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups milk
- 2 cups grated cheddar cheese
- 1/2 cup grated Swiss cheese

Add your chicken stock to a large pot and bring to a simmer. Add chopped broccoli, cover and simmer for 15-20 minutes.

To cook the chicken stock, heat the milk in the microwave for 1-2 minutes. shelved.

In another pan, melt the butter, then add the flour, salt and pepper. Cook over medium heat for about 2 minutes. Add warm milk and stir. Cook for another 6-8 minutes, until the soup starts to thicken.

Add the warm chicken stock and broccoli to the soup mixture and stir until well combined.

Add cheese and stir until cheese is completely melted. Service warm and enjoyable!
