Lemon Curd an easy sweet and sour dessert

I love this easy lemon curd when the lemons are ripe! Lemon slice cakes, lemon bars and lemon cookies are my go-to lemon snacks too!
What is Lemon Curd?
Have you tried lemon curd? Then today is your day to try something new! Lemon curd is a thick preserve made from lemons, eggs, butter and sugar. It’s delicious and can be used with many different desserts.
You can pour lemon curd on cakes, put on sugar cookies, use as pie filling and more! It has a thick consistency but a smooth texture that goes well with so many desserts. Lemon curd brings such a wonderful flavor to anything paired.

How to Make Lemon Curd
You’ll impress a lot of people with this lemon curd recipe. It sounds difficult to do, but it’s easy.
enthusiasm. Just cut off the zest/zest of 3 lemons and put in a food processor along with the sugar. A food processor will make your life easier at this step. It will do all the heavy lifting for you. It makes the jam/sugar mixture really good. You want the peel and sugar in one for easy mixing with the other ingredients.
cream. Take your mixer and beat the butter on medium speed. Then add the zest/sugar mixture and stir to combine. Add the eggs, lemon juice, salt, and watch them mix together for a beautiful yellow color.
hot. Pour lemon curd into a saucepan and heat over low heat. While stirring constantly, cook for about 10 minutes until it reaches a thick consistency. Take it off the heat to cool.
Chill + Serve! Then refrigerate until you need to use it!

double boiler: Keep away from metal pans when cooking this curd. Curds tend to have a metallic taste. One way to avoid this is to make a double boiler out of ceramic or glass bowls.
- Just fill the pan with a few inches of water.
- Place a ceramic or glass bowl over the pot. Bring water to a boil.
- Cook the curds as directed in the recipe
Lemon curd can be used in pies, but not the same. The pie filling is thickened with flour and cornstarch. Lemon curd uses egg yolks and pectin from lemons to thicken it.

- Mix with yogurt, ice cream, smoothies

Lemon curd will keep for a long time. shop Refrigerate in an airtight container for about 10 days. freeze up to 6 months. Thaw in the refrigerator before use.

- 3 lemons
- 1 1/2 cups sugar
- 1/4 pound unsalted butter room temperature
- 4 extra large eggs
- 1/2 cup lemon juice 3-4 lemons
- 1/8 teaspoon kosher salt
Use a grater or grater to remove the zest from 3 lemons. Add to food processor, and with a steel blade, beat sugar until fine.
In a mixer, beat cream butter and sugar. Add eggs 1 at a time, then add lemon juice and salt. combine.
