other cooking methods

barbecue: Skip the flour and instead coat the chicken breasts with olive oil and season with lemon pepper. Preheat the grill to medium heat and grill the chicken breasts for 5-7 minutes per side, until cooked through.

Bake in the oven: Again, omit the flour and simply drizzle the chicken breasts with olive oil and season with lemon pepper. Place on a greased pan and bake at 375° for 30 minutes or until chicken is fully cooked.

storage and reheating

Store remaining chicken in an airtight container. If you still have juice from the roasting pan, add it. Refrigerate for 3-4 days. Reheat:

  • Microwave: Place the chicken on a microwave-safe plate, covered with a damp paper towel. Microwave 45 seconds flip and cook for another 45 seconds. Continue cooking every 20 seconds until hot.
  • Oven: Preheat oven to 325°F. Place chicken and juices (if available) in an oven-safe roasting pan. Bake for about 15 minutes or until hot.
