I love easy chicken recipes. I have a few chicken breast recipes that I pull out when I need a quick and easy dinner, including Ranch Chicken, Crispy Chicken, and Green Chili Chicken.

You know those days when everything went wrong, your kids were driving you crazy, and you didn’t know what to do for dinner? I know them too well. On a day like this, the last thing I want to do is spend more than a minute thinking about dinner.
That’s when you remember this Roasted Lemon Pepper Chicken. Thank goodness for easy and simple recipes full of deliciousness! You may not be familiar with lemon pepper — the seasoning — but it adds a lot of flavor to recipes (especially this chicken dish).
Today’s Lemon Pepper Chicken is lightly floured and lemon pepper seasoning. This gives the chicken a delicious crispy coating on the outside. After sautéing the chicken breasts in butter, the insides are juicy and moist. Chicken is perfect!
How to Make Lemon Pepper Chicken
It takes about 2 steps to make this Lemon Pepper Chicken – it’s that easy. You definitely need McCormick Perfect Pinch Lemon & Pepper Seasoning. You can find it in almost any grocery store. It’s cheap and will last forever. It works in many different recipes.
coat. Combine flour and lemon pepper seasoning in a shallow dish. I like to use a cake pan or pie pan for this step. Coat your moist chicken breasts with flour and seasoning.
Cook. Set them aside while you heat the pan over medium heat. Cook the chicken in 2 tablespoons of butter and listen to it sizzle. I like that sound, how about you? Cook chicken until golden brown on both sides and cooked through. This is usually about 3-4 minutes per side.
Serve. Serve with a few slices of lemon and your favorite rice!
other cooking methods
barbecue: Skip the flour and instead coat the chicken breasts with olive oil and season with lemon pepper. Preheat the grill to medium heat and grill the chicken breasts for 5-7 minutes per side, until cooked through.
Bake in the oven: Again, omit the flour and simply drizzle the chicken breasts with olive oil and season with lemon pepper. Place on a greased pan and bake at 375° for 30 minutes or until chicken is fully cooked.
storage and reheating
Store remaining chicken in an airtight container. If you still have juice from the roasting pan, add it. Refrigerate for 3-4 days. Reheat:
- Microwave: Place the chicken on a microwave-safe plate, covered with a damp paper towel. Microwave 45 seconds flip and cook for another 45 seconds. Continue cooking every 20 seconds until hot.
- Oven: Preheat oven to 325°F. Place chicken and juices (if available) in an oven-safe roasting pan. Bake for about 15 minutes or until hot.

- 1/4 cup flour
- 1 tablespoon lemon pepper seasoning
- 1 pound boneless skinless chicken breasts thinly sliced
- 2 tablespoons butter
In a shallow dish, combine lemon pepper seasoning and flour. Coat wet chicken evenly with seasoned flour.
