Chicken, broccoli and cheese!

Are there any dinner recipes that you hated when you were a kid but like it now? ? Today’s recipe happens to be one of them…

Since I can remember, my mother has been making this cheese, chicken and broccoli casserole. This is one of the dinner recipes I’m afraid of because it’s full of broccoli! ! Yes, I will eat chicken and everything else, but I will try to sprinkle the remaining broccoli slices on my plate to make it look as if I eat more than I eat.

Now, I can’t stand this recipe! ! Fortunately, I grew up and like broccoli. I’m still trying to convince my kids that they like it too, but at the same time, they can do what I do and eat only big green pieces. 😉 At least my husband and I and some kids like this recipe, which means I try to add it to the menu plan. 😀

How to make chicken broccoli casserole:

The beauty of casseroles is that you just put everything in the casseroles and put them in the oven. This cheesy broccoli casserole is no exception! too easy. All you have to do is follow the steps below:

First cook the broccoli, drain the water and place it in a 9×13 pan. Then put the chopped chicken on top (for a post on the best way to chop chicken, click here).

In a bowl, mix the soup, mayonnaise, lemon juice and cheese together, and then spread on the chicken.

Put the melted butter and breadcrumbs in an airtight bag and shake well. Then pour on the soup mixture and bake at 350 degrees for 35 minutes or until heated.

Switch it

There are many ways to change the taste of this dish. Try one of the following ideas:

  • Replace cheddar cheese with something different, such as a Mexican cheese mixture.
  • Chop store-bought roast chicken or use chopped beef instead of chicken.
  • Replace broccoli with cauliflower or asparagus.
  • Use Tabasco or red pepper flakes to add some spices.
  • Add a can of black beans.
  • Use a jar of butter mushrooms instead of a jar of butter chicken.
  • Use fried onions instead of breadcrumbs.

Tips for storing and freezing meals

Shop. Simply put it in an airtight container in the refrigerator for up to 3 days.

Reheat. To reheat quickly, you can use a microwave oven. Place the remaining casserole in a microwave safe pan and heat for 1 minute. Stir and heat in 30 second increments until the desired temperature is reached.

You can also reheat it in the oven. It takes longer, but the quality of the dishes is better than that of the microwave. Place in an oven-safe dish. Heat the oven to 350 degrees and bake for 20 minutes or until the desired temperature is reached.

Freezer meals. Broccoli casserole is a great freezer meal. Follow the written instructions. Except adding breadcrumbs. Make sure it is placed in a freezer-safe plate and wrapped tightly. Freeze for 2-3 months. When you are ready to use, take it out of the refrigerator, defrost, add bread crumbs and bake at 350 degrees for 35-40 minutes.

Our family loves simple and delicious casseroles, so we are happy to make this chicken and broccoli casserole rotate again. This is a favorite for Sunday dinners!
