How to make lemon cake mix cookies
I don’t always have lemon cake mix on hand. This is the main ingredient, but all the remaining ingredients are simple-butter, cream cheese, eggs, lemon extract and powdered sugar. Because we’ve been making more of these, but I definitely get a few lemon cake boxes every month, especially since we are also fascinated by the lemon cakes that use them.
In addition to freezing the dough for these biscuits for half an hour, these biscuits can be made quickly with the help of children.
Dough. Use a hand mixer to beat the butter, lemon extract, eggs, and cream cheese until fluffy. Add cake flour and stir until smooth.
refrigeration. Put it in the refrigerator for 30 minutes.
Powdered sugar. Add ½ cup powdered sugar to a small bowl. Roll the dough into 1/2-1 inch balls, then dip in powdered sugar. Put it on the greased biscuit chip.
bake. Bake for 12-13 minutes. If necessary, sift with powdered sugar. Please enjoy!
Replenish: If you find it particularly fancy, you can add white chocolate chips to the dough, top with toasted coconut, or even sprinkle powdered sugar/lemon glaze on your baked cookies.
Storage and freezing
How do I store baked cookies?
- Counter: After the biscuits have cooled, put them in an airtight container. Cookies will be stored for several days. To prevent them from spoiling, you can also put a slice of fresh bread in the container.
- Freezer: After the biscuits have cooled, put them in an airtight container. Put parchment or wax paper between each layer. Freeze for 4-6 months.
Can I freeze the cake mix cookie dough? Yes! You can easily freeze the dough and bake it later. Place the dough balls on the cookie sheets to quickly freeze them. Freeze for about 2 hours or until it freezes outside. Place the ball in a sealed freezer safe container. Freeze safely for 4-6 months.
Baking: Take out the required number of dough balls. Allow to thaw on the cookie sheet and bake according to the recipe.
These cookies are really soft and melt in your mouth. They have enough lemons to attract everyone who is obsessed with lemon snacks, but don’t be so lemony that they are too sour.
