Easy Mint Brownies a family favorite!
Thick and soft mint brownies filled with creamy mint. They are decadent and only need a few ingredients!

Homemade is always better, but sometimes life just needs to be simplified. This is the perfect recipe to make in a pinch because not only does it taste great, but it comes together in no time!
Chocolate and mint are a classic and crazy deli combo. I try to keep these simple ingredients so I can always make some brownies in a pinch! Most of these ingredients you can find at the dollar store, bonus! ! ! !
Tips, Changes + Stored Information
make fudge brownies Don’t overcook or overbake the batter instead of cake-like brownies. Leave it a little lower because then it will be fudgy, soft and falling apart.
For more mint flavor:
- Crushed or chopped extra thin mint and mixed with brownie batter for further mint flavor
- Top the batter with finely chopped thin melts and let them melt on top of the brownies for a super mint flavor
- For super mint flavor add peppermint extract
- Mixed Mint Chips

- 1 package Betty Crocker Fudge Brownie Mix
- 2 cups powdered sugar
- 1/2 cup softened butter
- 2 tablespoons peppermint extract
- 2-3 drops green food coloring
- 1 tablespoon milk
- 6 tablespoons butter
- 2 cups semisweet chocolate chips

Preheat oven to 350 degrees and line and lightly grease a 9Ă—13 plate with parchment paper.

Make the brownies following the directions on the box and bake in a 9Ă—13 pan.

In a medium bowl whisk together powdered sugar, butter, peppermint extract, food coloring and milk until smooth. Spread evenly over cooled brownies (we added clumps on top to make it easier to spread).

In a microwave safe bowl, melt chocolate chips and butter until smooth. spread. Layer with mint, cover and cool for at least 1 hour.

Let sit for 20-30 minutes before cutting into squares.
