Now that it’s getting colder and I love coming home from get off work and having something warm and delicious in the slow cooker, what could be better than homemade mashed potatoes?

These Cheesy Garlic Crock Pot Mashed Potatoes are the perfect addition to any fall meal and are super easy to make. These are without a doubt the best mashed potatoes I’ve ever made! They’re creamy, smooth and savory, and the cheese adds a lot of goodness.

The garlic adds a strong flavor without being overpowering at all. Because it is cooked with the potatoes for a long time, it becomes fragrant, mellow and delicious. My kids usually hate garlic, but they love these potatoes and can’t get enough! These potatoes would be great fun as a Thanksgiving side dish, but they’re easy to make for a weeknight meal. How to Make Crock Pot Mashed Potatoes

The beauty of most slow cooker recipes is that there is very little prep work!

You just throw everything in the saucepan and wait patiently for a few hours until everything is fully cooked. Sometimes this is the hardest part of the recipe. 😉 It makes your house smell incredible all day long, which is great, but also pure torture. Well (like it or not), this recipe is no exception.

The most important prep work is slicing the potatoes, which only takes a few minutes, then put everything in the crock pot and make your house smell like delicious garlic heaven. You’re welcome/sorry. 😉

  1. Peel the potatoes and cut them into one-inch pieces. Put the potatoes and garlic in the slow cooker and pour the chicken stock over it. Add bay leaves and cook on low for 6-8 hours or high for 3-4 hours.
  2. Drain potatoes, reserving cooking liquid. Mash potatoes with milk and butter until mostly smooth. Add cooking liquid as needed to achieve desired consistency. Add sour cream, salt, pepper and cheese. Enjoy while it’s hot!
