Zucchini is the best vegetable side dish (in my humble opinion) and one of our favorite ways to prepare it! They are very similar to our Baked Zucchini Fries, just lighter than fried zucchini.

One of our favorite vegetables to use as a side dish is zucchini! In fact, we often make fried zucchini for Sunday dinner. Yes, they’re fried and not necessarily “good” for you, so we decided to make a healthier version – today’s Baked Zucchini Slices recipe.

Like most of our recipes, this one is super easy. The coating process is basically the same as frying the zucchini, but instead of frying in oil, it is baked in the oven for 30 minutes. The result is delicious, crispy zucchini slices that taste just as good as fried. We were so impressed with the deliciousness of these foods!

Cooking on a wire rack on a baking sheet works best for this recipe.

How to make zucchini slices:

These zucchini slices are really easy to make.

Bread crumbs. Start by stirring together the breadcrumbs, cheese, garlic powder, salt and pepper. From there, you place the milk in a shallow bowl, dip the zucchini slices in, then toss them into the breadcrumb mixture to coat both sides.

Can you air fry zucchini slices? Air frying is another healthy option, just like baking. Heat the air fryer to 390°F. Prepare your zucchini according to recipe instructions. Place the single-layered zucchini rounds in the air fryer. Cook for 5-7 minutes until crisp.

  • Refrigerator: Store cooled potato chips in an airtight container in the refrigerator for 3-5 days.
  • Freezer: Once the chips are cool, quickly freeze them by placing them in a single layer on top of a cookie sheet. Freeze for 2-3 hours, then transfer chips to a freezer-safe container. Label and freeze for 3-6 months.

How to reheat leftovers? These roasted zucchini slices are best eaten right away, but if you happen to have leftovers, the best way to reheat them is in the oven. You can bake them on low for 2-4 minutes, or put them in a preheated oven at 375°F for 5-7 minutes until they are heated through.
