This crock pot roast recipe is one of our favorite Sunday dinners. It only takes 3 minutes of prep time and the slow cooker does the rest! The Chuck Roast ended up being so tender and full of flavors of brown gravy, Italian and ranch dressing!

Easiest Crock Pot Bake Ever!

Sunday dinner is our favorite! It’s one night a week and we promise dinner with the whole family. Since we have church we make crock pot meals a lot and one of our favorites is Pot Roast. It’s simple, loved by the whole family, and perfect for any night of the week.

For as long as I can remember, we’ve made stew recipes that are super easy! It only takes a few minutes to prepare (literally) and it always turns out so soft and delicious. Like I said – it’s easy and delicious, and the meat can be roasted or made and used in many other recipes. We always have leftovers, so we made green chile donkeys for dinner the next night.

What are the best roasts for a pot roast? Chuck roasts are the best cuts to use in stews. Find one that is marbled. These connective tissues soften during cooking, making the meat tender, juicy and easier to spread.

How much hot pot can one eat? When serving meat as a main course, plan for 8 ounces per person.If you have a big appetite or like leftovers, then plan for 12 ounces of meat per person.

How to Roast Meat in a Crock Pot

I always buy my Chuck Roast at Sam’s Club. It comes in a pack of 2 and weighs about 5-6 pounds net, so each roast is usually 2.5 to 3 pounds. For a big party, you may need to cook in a crock pot. For my family of 8 we can get it using 1 roast. If I’m not using another roast, I’ll freeze it for later that month. The seasonings we make for grilled meats are made from 3 ingredients (1 tablespoon each):

  • brown gravy dry mix
  • Hidden Valley Dry Blend
  • Italian seasoning dry mix

NOTE: Since we make this beef stew a lot, I like to make this seasoning in bulk (usually 1 cup of each dry mix), then I scoop out 1/4 cup of the mix and sprinkle it on top. 😉

Here are the instructions for a 2-3 lb roast! First, place the chuck roast into your crockpot or slow cooker. Pour ⅓ cup of water over the roast.

Combine all 3 dry mixtures and sprinkle over roast. Cook on low for 7-8 hours or high for 4 hours, or until tender. I personally prefer cooking on LOW – that way the meat seems more tender. 🙂

How do I add vegetables to a crock pot roast?

Making veggies from your roast is as easy as adding them to the crock pot! Put your roast in the crock pot. Then, add seasoning and water. Finally, add any vegetables you want.

The following vegetables are commonly used: diced or baby carrots, chopped onions, whole or halved small sweet or white potatoes, diced celery, diced tomatoes. Cover and cook according to recipe instructions.

Pot roast gravy from drippings

If you want to pour gravy on top, it’s super easy. You only need the following ingredients:

  • Baked drips
  • milk
  • flour

Take about ⅓ – Âœ cup of the drippings roasted from the crock pot and add it to a small pot on the stove. Warm up slightly, then add 1 TB flour and 1 TB milk. Continue adding a little milk and a little flour until you reach the consistency you like. Add a pinch of salt and pepper!

Can you make hot pot ahead of time?

Stew can be made ahead of time. Once the roast has finished cooking, place the entire pot containing the roast and juices in the refrigerator. When you’re ready to eat, take the pan out of the refrigerator and heat the roast and liquid to your desired temperature. Take out the roast, slice and serve!

Can I freeze cooked stew?

If you have leftover roast but don’t plan to eat it within 2-3 days, put it in the refrigerator for later. Place roasts and cooking juices in freezer-safe, airtight containers. Freeze up to 2 months. When ready to use, thaw in the refrigerator for 1-2 days. Place meat and juices in a roasting pan, cover and bake at 325°F until meat reaches desired temperature.

Can hot pot be frozen?

Yes, you can make roasts in the frozen state. Make sure not to preheat the stoneware. Frozen meat can crack an already hot dish. After adding the frozen meat to the stoneware, add 1 cup warm liquid. Frozen roasts take longer to cook, so you’ll need to add 4 to 6 hours of cooking time on low, and an additional 2 hours on high.

Can the hot pot be reheated?

Yes! Store the rest of the stew on a covered plate in the refrigerator. Make sure to include any juices from the original cooking pot. These juices keep the roast from drying out in the fridge. You can reheat in the microwave, but I prefer to reheat in the oven. I cover the pan with the meat and juices and bake at 325F until the meat reaches the desired temperature.

What can I do with the leftover stew?

Depending on how you originally seasoned the stew, you can easily use the leftover roast to create a whole new dinner dish. Try some of these ideas: beef salad dressing, shredded beef tacos, empanadas, pocket sandwiches, patty melts, stir fry, roast beef sandwiches, shepherd’s pie.
