Simple vegetarian tacos (+video)


These delicious vegetarian tacos are made from burritos filled with ranch vegetable dipping sauce and chopped vegetables, making them the perfect bite-sized party appetizer!

Game day appetizers

Family and friends gather at our home to watch the game all year round.Normally, we don’t really plan to make them bigger, so we tend to keep things Very easy. We like anything that can be put in a crock pot or a recipe that can be prepared in advance and does not require reheating.

We always try to include vegetables in our game day spread. Although I like to make vegetable trays like this, I want to think of another interesting way to enjoy vegetables and dipping sauces.

These vegetable tacos are the perfect solution. We used our preferred dipping sauce Marzetti® Ranch Veggie Dip and cream cheese to make the filling. I also added shredded cheese, sweet peppers, green onions, green peppers, black olives and a little seasoning.

They have a thick, creamy texture, topped with cheese and diced vegetables. Of course, if you want to make them bigger, you can add rinsed black beans or grilled chicken shreds. We like them as they are!

How to make them

cream. In a medium mixing bowl, combine the cream cheese and ranch dip. Using a hand blender, blend until smooth, about 1 minute.

vegetable. Add cheese, bell peppers, onions, peppers, olives, garlic powder and salt. Mix until combined, about 2 minutes.

roll. Divide the mixture evenly between the two flour tortillas. Unfold to cover the surface of the tortilla. Tightly rolled into a log.

chill. Put in plastic wrap and refrigerate for 2-4 hours or until hard.

Serve. Remove from the plastic wrap and cut into 1 inch thick slices. Serve immediately.

Recipe notes and storage tips

  • You can also use other types of cheese, such as cheddar, mozzarella, or parmesan.
  • If you like spices, you can choose more spicy green chilies. You can also sprinkle red pepper flakes or add chili.
  • For best cutting results, make sure to wrap the tortillas tightly. Air bubbles will cause the filling to fall off more easily and prevent the rolls from sticking together.

Advance time: I love that when I come across recipes that can be made in advance, these vegan tacos are no exception. After wrapping them in plastic wrap (step 4), put them in the refrigerator overnight, and then cut them before eating the next day.

Leftovers: Wrap the leftovers tightly with plastic wrap or an airtight container, then Shop They stay in the refrigerator for 3-4 days. I do not recommend freezing them.
