I like Spanish rice (aka Mexican rice)! As mentioned earlier, I am ½ Mexican. I like this family tradition very much, and I am especially grateful to my family for teaching me to make delicious Mexican food.
As long as I can remember, my mother has been making today’s Spanish rice recipe and showed me how to do it for the first time a few years ago (and empanadas, enchiladas and tacos). Now, we do it once a week because my kids are obsessed and it’s easy.
This recipe is actually a Spanish rice recipe from a popular Mexican restaurant in Mesa called Mango’s (located in Main). If you have been there before and like their rice, then you will love this recipe. It’s really simple, delicious, and a perfect match for any Mexican dish!
How to make Spanish rice
One of the main reasons we like this recipe (except for its simplicity) is because we always have the ingredients on hand. Here are the Spanish rice ingredients needed to make this delicious side dish:
- Long grain rice
- Minced garlic
- chicken soup
- Garlic pepper + salt
First fry the rice to brown in oil (we use about ⅛ but it depends on how much you like). Stir in minced garlic for a minute, then add tomato sauce, chicken broth (or water and broth cubes) and spices.
Reduce the heat and simmer for 30-40 minutes. Fuzz before serving.

How to reheat Spanish rice/Mexican rice? Be sure to store it properly in an airtight container. It can be stored in the refrigerator for up to 5-6 days. To reheat, simply reheat it in the microwave or on the stove for a few minutes.
Can Spanish rice be frozen? Yes, it can be frozen for future use. Just put about 3 cups of cooked rice in a zippered freezer bag, label it and put it in the freezer for 4-6 months.
When you are ready to use it, you can thaw the rice in the refrigerator or cook it directly from the refrigerator. Using a microwave safe bowl, stir the rice at high speed every 2 minutes until the rice reaches the temperature you want.

- 2 cups long grain rice
- 1/8 cup oil
- 8 ounces tomato paste
- 6 coriander (optional)
- 1 teaspoon salt
- 1 teaspoon minced garlic
- 4 cups water (or 4 cups chicken low-sodium chicken broth-no broth)
- 1 cube chicken broth
- Dash garlic pepper
Heat oil in a large frying pan over medium heat.
Add rice and cook until golden brown.
Add 1 piece of chicken-flavored broth to 4 cups of water and heat it in the microwave for 3 minutes.
When the rice turns brown, add water, tomato paste, salt, garlic, cumin, and garlic pepper.
Stir and cover the pot. Simmer for 30-40 minutes or until all is cooked and there is no liquid. Be soft before serving and enjoy.
