One of the easiest dinner recipes ever! This super easy taco soup is made with beans, corn, tomatoes, and green peppers, with ranch dressing and taco seasoning. All you have to do is pour everything into a saucepan and simmer. Ready in less than 20 minutes!

We all love delicious and easy soup recipes, right? ? One of my favorite meals is not only delicious and easy, it’s quick and our favorite taco soup recipe.

This easy taco soup is one I often make in the cooler winter months, but it’s great all year round! This is obviously a soup version of taco salad, so if you like taco salad, you’ll love this recipe. Best of all, it takes 20 minutes in total to make. Yes, you see what I mean! ! 20 minutes to prepare and cook this meal!

Another great part of this recipe is that it’s mostly made of canned food, which is what we always have on hand! All you have to do is open a few cans, add some spices and you have a super tasty and easy meal the whole family will enjoy.

Almost all ingredients come from cans!

These are all canned goods I have ever used…I always have them on hand! Nothing too crazy, just:

  • Chili beans
  • black beans
  • ketchup
  • diced tomato
  • corn
  • green pepper

The only other ingredients I use that are not canned are ranch dressing mix and taco seasoning! You can buy individual packets, or the equivalent of 3 TB if you have large containers of seasonings.

How to Make Taco Soup

Not only are the ingredients for this recipe simple – the steps themselves are even simpler!

Throw them in. All you have to do is toss all the ingredients into a large pot. There is no particular order, just throw them all in! Maybe stir a few times to combine everything well, then turn on the heat.

simmer. Bring the soup to a boil and simmer for about 15 minutes. Once it’s hot and ready, you can serve it with your favorite toppings.

You can use whatever you like, but we really like these toppings:

  • sour cream
  • grated cheese
  • tortilla strips
  • coriander
  • avocado slices

How to thicken taco soup?If you find your soup is not thick enough, you can simply mix 2-3 tablespoons of flour or cornstarch into Πc stock. After mixing, return the broth to the main stock pot and stir.

Can this be made in a crock pot? Yes it can! We have a slow cooker version which is a little different but just as good. Check it out here. Or for this particular recipe, cook on HIGH for 2-3 hours or LOW for 6-7 hours. 😉

It’s super easy to make this soup in Instapot. Just follow these simple steps…

  1. Set the Instant Pot to “sautĂ©.”
  2. Once hot, add the ingredients to the pot.
  3. Close the lid and set the valve to “Sealing”.
  4. Press the Soup button and set the timer for 20 minutes.
  5. When the soup is done, turn the valve to “Quick Release”.

Can I make taco soup ahead of time? Yes, you can easily make this soup 1-2 days ahead. Store in an airtight container in the refrigerator. Heat on the stove or in a crock until warm.

Freezer meal. Taco soup is a great freezer meal. Combine all ingredients into an airtight container and freeze. Remove from refrigerator while cooking and place directly into saucepan over high heat for 4 hours or low heat for 8 hours. You can also thaw overnight and heat on the stove top until hot.

Leftovers. Store leftovers in an airtight container. Store in the refrigerator for 3-4 days or freeze for 2-3 months.

Reheat. If you’re short on time or a small quantity, you can reheat in the microwave in 30-second increments, stirring in between, until hot. If you have time or a lot, you can also reheat on the stovetop or in a crock pot, stirring occasionally until warm.

As part of our 6 month food supply on hand, we have collected quite a bit of canned food. Not only does this recipe help me use some of these cans, but it also saves me time and helps me quickly make an easy meal or side dish, which is exactly what I usually want!

  • 3 – 15 oz cans peppers with beans or 3 cans chipotle beans with 1 lb cooked burger
  • 15 oz can black beans
  • 15 oz can tomato paste
  • 15 oz can diced tomatoes
  • 15 oz canned corn
  • 4 ounces diced green peppers
  • 3 TB ranch dressing mix or 1 package
  • 3 TB Taco Salad Dressing or 1 packet
  • 1 1/2 degrees Celsius water
  • Put all the ingredients together in the pot.

  • Bring the soup to a boil and simmer for 15 minutes.

  • Serve hot with sour cream, tortilla strips, and cilantro.
