Easy and quick weekend dinner

The time between the children coming home from school and dinner can be very difficult. The children are tired and hungry after school, and there are activities to go…but they don’t have much time to prepare healthy meals for their families.

Meals such as cream pasta and these Italian pork chops are perfect for those stressful nights, when you need to have dinner on the table quickly!

Although I like the tender and delicious pork, the vegetables in this dish are great. I can eat these roasted vegetables all day long. The great thing is that my kids like them too. I hope you enjoy this meal as much as we do!

A whole meal in one pot!

One thing that makes this dinner so easy is that the main dish (pork chop) and side dish (grilled vegetables) are seasoned and grilled on the same pan!

season. To assemble this pan meal, just throw the vegetables on the pan, add a mixture of oil, Italian seasoning, salt, pepper, and Parmesan cheese, and rub the pork chops with the same seasoning.

Bake and grill. Put it in the oven, turn the pork chops in half, and grill them until they are completely browned. The internal temperature of the pork chops should be 145°F (medium rare) and 160° (medium). Let them rest for 3-5 minutes before cutting.

Serve. If needed, you can sprinkle more Parmesan cheese (but let’s be realistic-who doesn’t have that desire), and then serve with cereal, pasta, rice, baked potatoes… voila! Provide fast, delicious, healthy and balanced meals for the whole family.

*notes: We used thinly sliced pork chops and then mashed them to make them tender. If you use a thicker chop, be sure to mash it to soften it and adjust the cooking time. Thicker incisions require extra time.

One advantage of using vegetables is that you can use whatever you like. Some other delicious additives include:

  • Pearl onion
  • Broccoli and cauliflower florets
  • Brussels sprouts
  • asparagus
  • Cut small potatoes.

I will often buy a pack Assorted frozen vegetables Throw it on the pan to make this dish easier. It is also a good idea to use seasonal produce, as they are usually fresh and cheap.

Chicken: Use chicken breast instead of pork chops. Bake time 375 30 minutes.
