Pork Ribs Grilled Vegetables


These Italian pork chops require only a few ingredients and are roasted in the oven with plenty of vegetables. It only takes 30 minutes to prepare it and serve it!

I like simple dinners where meat and vegetables are grilled together on a pan. If you are with me, you need our pan chicken fajitas and grilled honey mustard chicken!

Easy and quick weekend dinner

The time between the children coming home from school and dinner can be very difficult. The children are tired and hungry after school, and there are activities to go…but they don’t have much time to prepare healthy meals for their families.

Meals such as cream pasta and these Italian pork chops are perfect for those stressful nights, when you need to have dinner on the table quickly!

Although I like the tender and delicious pork, the vegetables in this dish are great. I can eat these roasted vegetables all day long. The great thing is that my kids like them too. I hope you enjoy this meal as much as we do!

A whole meal in one pot!

One thing that makes this dinner so easy is that the main dish (pork chop) and side dish (grilled vegetables) are seasoned and grilled on the same pan!

*notes: We used thinly sliced ​​pork chops and then mashed them to make them tender. If you use a thicker chop, be sure to mash it to soften it and adjust the cooking time. Thicker incisions require extra time.

  • 4 bone-in pork chops cut into thin slices, mashed to tender
  • 1 zucchini cut into 1-inch pieces
