A quick Christmas cookie
We fill our holiday with Christmas and everything delicious, the more festive the better! If they are very easy to make and chew, so much the better. If this sounds good to you, then I have the perfect cookie!
Mint Chocolate Chip Cookies start with the version of our favorite chocolate chip cookie with a mint flavor! I added a little mint extract to the batter to give it an extra minty flavor and mixed it in some Andean mint chips to add flavor. Christmas chocolate chips give it an extra festive atmosphere!
These are mixed and baked in 15 minutes, perfect for last minute guests or sharing with friends and neighbors! I know you will like the mint/chocolate combination as much as we do!
How to make mint chocolate chip cookies
Prepare. Preheat the oven to 350° F.
Wet ingredients. Whisk butter, oil, and sugar in a blender. Add eggs and beat until fluffy.
Dry ingredients. Add flour, baking powder, baking soda, and salt in another bowl and mix well. Add to the wet ingredients and mix well.
Combine. Add chocolate chips, mint chips, almond extract and vanilla (add extra mint extract-1 teaspoon. If you want it to have more mint flavor). Stir well.
bake. Bake at 350 degrees for 7-8 minutes.
Tips + storage information
To cool the cookies: For this recipe, you don’t want to skip the cooling time. Cooling the dough will help make your inside soft and chewy outside. Cooling the dough also allows more time for the ingredients to “settle” and provides you with the perfect biscuit texture. Finally, cooling the dough will help prevent them from spreading in the oven.

- Dough: After mixing the dough, you can cover it and store it in the refrigerator for up to 24 hours. You can also make the dough into balls and freeze them quickly.
