Sweet and delicious salad
Loaded with fresh fruit, toasted almonds, and crunchy breaded chicken, this Honey Mustard Chicken Salad is the perfect midday meal! I don’t know about you, but I love great salads, especially when it comes to crispy chicken and homemade dressing.
All the berries and fruit bring sweetness to the salad, while the chicken replaces it with a savory flavor, and the honey mustard dressing adds tangy flavor.
This recipe makes a great salad, so you can enjoy it on its own as a main course (and maybe some leftovers), or you can serve it as a side dish for multiple people. Either way, I promise you will be satisfied with this delicious salad.
Ingredient Tips
Green vegetables: At the end of the day, it’s up to you which vegetable to use, but romaine lettuce and spinach usually mix well.
avocado: Avocados are ripe when they are firm but take some pressure in your hands. It should be a darker color and not feel too mushy.
Strawberry: Ripe strawberries are dark red, plump and have fresh green leaves. There should be no signs of green or white on the berries.
blueberry: They should be dark blue or purple in color and firm and not mushy in texture. Ripe berries are not red or green, and if they are soft and mushy, they may be overripe.
almond: I used almond strips, but you could also use chopped pecans or walnuts. For a rich, nutty flavor, try baking it beforehand.
- To roast nuts: Preheat oven to 350°F Line a baking sheet with parchment paper and spread nuts in a single layer. Bake for 8-10 minutes, or until they are the desired color. Keep an eye on them as they go from perfectly toasted to charred in no time.

Tyson® Lightly breaded chicken breast strips make prep a breeze.
I picked up a bag of these lightly breaded chicken breast strips in the freezer aisle of Walmart. They are made from 100% natural ingredients, which means they are paraben free! I baked them in the oven for about 22 minutes, how did it turn out? Chicken is crispy and tender with 65% less crumb compared to Crispy Original Strips. That’s right, more white meat chicken and the same crunchy, savory, breaded flavor.
