Cucumber Tomato Avocado Salad is an easy, delicious, and quick salad that’s perfect for dinner or barbecues and gatherings. It’s so light and refreshing!

Cucumber is tasty and light, which makes any dish with it feel refreshing. Try cucumber salsa or Greek cucumber cups for some other fresh side dishes.

I have a new favorite salad, guys! This Cucumber Tomato Avocado Salad has all of my favorite toppings. I made it a few times in the last month and it did not disappoint each time.

Ingredients include tomatoes, cucumbers, avocado, cilantro, feta cheese and dressing. It tastes really fresh!

We use Italian dressing for convenience, but this would be great with many dressings – maybe chipotle ranch or creamy avocado. 😉

This salad is also easy and quick to make. It has avocados in it, you definitely want to try and make them right before serving so they don’t brown, but I think this would be a hit at any party you take this to.

Just chop and mix!

Tips for Advance and Storage

in advance: Like many fruits, avocados begin to brown after being cut. Thankfully, keeping them in the refrigerator slows down the process. You can make the salad a few hours before serving and store it in the refrigerator.

storage: Leftover Cucumber Tomato Avocado Salad will keep covered in the refrigerator for 2-3 days. Avocados will start to brown, but they are still edible.

seriously? I ate it again a few days ago and I already wish I could do it again. Since it’s delicious and simple, I figured it would be a regular salad at home. 😉
