Grandma’s famous sausage and egg recipe
Spicy and rich sausages and eggs are the most delicious breakfast to start the day! Serve with tortillas or use in breakfast burritos and tacos.
From time to time, I like a delicious Mexican breakfast, including eggs and sausage, whether I eat it in breakfast tacos or with some breakfast potatoes or hash browns.
Classic sausage breakfast
If you have never heard of Chorizo​​, it is a spicy Mexican sausage used in many Spanish breakfast recipes.
It is easy to cook, delicious, rich in fillings, and suitable for a variety of different morning dishes. My family likes to mix sausages and eggs to make breakfast tacos and burritos.
If you are not familiar with sausages, once you make this recipe, you will definitely thank me. This is the staple food of our family’s breakfast. The smell of sausage cooking fills the house and prepares everyone in the kitchen to eat it!
How to make sausage and eggs
Cooking sausage and eggs is easy!
Just heat the pan over medium-high heat and add a pound of sausage. Cook for about 4-5 minutes, until the color turns brown. Once the meat is browned, add six eggs and stir with a spatula. Make sure not to fry too much-you still want to see large chunks of eggs in the sausage.
At this point, if you want to add some shredded cheddar cheese! Adding cheese will also reduce the spiciness of the sausage, so this is a good way to make it milder.
Sprinkle a little chopped cilantro on top before serving. Serve with heated mini flour or tortillas.
notes: Most stores have several different types of sausages, but we usually find Mexican sausages near the sausages in the meat section of the store. We do not have a favorite brand, and usually choose store-branded meat.

How to store leftover sausages and eggs? Put the remaining sausages and eggs in an airtight container. It can be stored in the refrigerator for up to a week. Heat it up and reuse it for other breakfast foods! You can also store it in a freezer-safe Ziploc bag and keep it in the refrigerator for up to 2 months.

Cook sausages. Add eggs and stir-fry-don’t fry too much, or you won’t see the eggs.
