The kids are back at school and we are finally back to normal life at the Merkleys. While we love the lazy days of summer, I love getting back to the schedule and keeping our days in order. To make the back-to-school excitement even more exciting, we’ve been coming up with some fun lunch ideas for kids using Flatout products.

Over the past year, we’ve shared some of our kids’ favorite Flatout recipes, including Flatbread Pumpkin Quesadillas and Flatbread Wrap Bites. Today’s Flatbread Monster Sandwich recipe is another family favorite! Not only do they love to eat them, but they are also fun to make and make school lunches that much more enjoyable. These little monsters can be made in a number of ways, but can be easily customized with your child’s favorite sandwich ingredients.

Flatout Foldits are the perfect base for our sandwiches, the perfect monster mouth. Not only are they healthy and delicious, they’re perfect for kids’ lunches (even my own at home!) We stuffed sandwiches with our favorite meats, cheeses, and veggies, and used different olives for the eyes. While I’ll admit the kids don’t like Spanish olives, they absolutely love their eyeballs as monster sandwiches!

Flatbread Monster Sandwich

For the Italian monster: Add mayo on one side of the flatbread, then mustard on the other side. On the mayo side, lay the ham, salami, and cheese to look like teeth. Use two toothpicks to hold everything in place. Top toothpicks with olives for the eyes.

For chickens and caesar monsters: Add mayo on one side of the flatbread, then mustard on the other side. On the mayo side, lay the chicken, lettuce, and cheese, cut to look like teeth. Use two toothpicks to hold everything in place. Top toothpicks with olives for the eyes.

Recipe Tips

Favorite sandwich toppings: These are really fun and creative. Here is a list of more items you might use, and definitely add your own favorites.

  • Meat- Ham, pepperoni slices, turkey, roast beef, salami, bacon, pastrami, chicken
  • condiment- relish, mustard, mayonnaise, sweet chili sauce, cream cheese, cranberry sauce, pesto, hummus, ranch
  • toppings- Lettuce, Tomatoes, Jalapenos, Cheese, Bell Peppers, Pickles, Onions, Spinach

How to Pack These Lunches

  • If you want to take these to school lunches with your kids, it’s best to store them in a Tupperware container rather than a plastic bag for eating on the go.
  • Secure the olives with toothpicks to keep them in place. Just make sure your child knows to take it out before eating.

shop Keep the meat, cheese and toppings in the refrigerator until you are ready to mix the toppings. It’s really not a make-ahead meal unless you pack them for lunch. In this case, place the Tupperware container in a lunchbox with an ice pack.
