  • 1 pound boneless skinless chicken breasts, cut into thin strips
  • 1 tablespoon Mexican Seasoning Mix Sodium Free
  • 2 tablespoons olive oil divided
  • 1 medium onion submerged
  • 2 chopped red and/or green bell peppers
  • 32 ounces low-sodium chicken broth divided
  • 1 package Knorr® Fiesta Sides™ – Spanish Rice
  • 4 cups low-sodium pinto and/or black beans, drained and rinsed
  • Season chicken with Mexican mixture. In a large skillet or Dutch oven over medium-high heat, add 1 tablespoon olive oil. When the oil is hot, add the chicken and stir occasionally until the chicken is cooked through, about 5 minutes. Add bell peppers and onions and cook for 3 minutes. Remove and set aside.

  • In the same skillet heat remaining 1 tablespoon olive oil, add 2 cups chicken stock and bring to a boil. Add Knorr® Fiesta Sides™ – Spanish Rice and prepare according to package directions (cover and simmer for 7 minutes).

  • Stir in chicken/onion and pepper, along with beans and remaining chicken stock. Bring to a boil for 10 minutes. Serve with sour cream, shredded cheese, chopped cilantro, lime wedges, and tortilla strips if desired.
