A meal made from pantry staples

I’m Christine from Yellow Bliss Road and I’ve got you another super easy dinner recipe that I promise your family will love! This Creamy Fiesta Chicken is a quick and easy recipe to cook all day in the slow cooker. The sauce was rich, creamy and super tasty and the chicken was tender and tasty.

I love that it’s full of ingredients I always have in my pantry – canned tomatoes and corn, black beans, taco seasoning, ranch seasoning, onions, garlic and cream cheese. These are staples I cook often, but have never used them in this combination.

Let the slow cooker do the work!

Of course, the best part about this Creamy Fiesta Chicken is that you just pour it all into the slow cooker (except for the cream cheese) and let the machine do its job. I’ve been cooking since the morning, so when my kids get home from school, they immediately notice the incredible scent wafting through the house.

It’s like a grandma’s kitchen and a Mexican restaurant in one! They were so excited to try it that my whole family ate their dinner in 5 minutes when we sat down to eat. Then you’ll know it’s a good thing!

Throw it in. Start by placing all canned ingredients, onions and garlic in the bottom. Place chicken on top and sprinkle with ranch and taco seasoning.

Cook. You can cook on low for 4-6 hours or on high for 3-4 hours. I prefer to cook it on low heat because I think the chicken comes out more tender that way! When the time is up, shred the chicken (any of these methods will work great) and top with cream cheese to soften (but don’t mix). Cover and cook on LOW for another 30 minutes.

Stir and serve. After 30 minutes, add cream cheese and enjoy!

Instant Pot Instructions

Put all ingredients (minus the cream cheese) in the Instant Pot. Press the poultry button and add 5 minutes. Cook chicken and all other ingredients for 20 minutes. Let the pressure release naturally, manually releasing it at the end if needed.

Add the cream cheese cubes, cover the Instant Pot to maintain heat, and allow the cream cheese to soften and incorporate into the mixture. Remove the lid, stir well and serve!

Mexican rice is great

I served Slow Cooker Creamy Fiesta Chicken on a bed of my favorite Mexican rice and watched my daughter gather around more than half of her food before I sat down.

You can also serve this on rice, in a tortilla (wouldn’t this be a great burrito??), with pasta, or on its own. I already crave it and can’t wait to make it again!

Top ideas:

Avocado, sour cream, pico de gallo, freshly squeezed lime/lemon juice, guacamole, cilantro and shredded cheese would be a great addition to this dish.

  • 2 pounds boneless skinless chicken breasts about 2-3 breasts
  • 1/2 bag dry ranch dressing mix (about 1 tablespoon)
  • 1/2 package taco seasoning (about 1 tablespoon)
  • 10 ounces Rotel tomatoes
  • 1 can yellow corn drained
  • 1 can black beans drained and rinsed
  • 1/2 medium diced onion
  • 2 teaspoons minced garlic
  • 8 ounces cream cheese
  • salt to taste
  • Combine corn, rotel, black beans, onion, garlic in bottom of slow cooker. Place chicken on top and sprinkle with taco seasoning and ranch mixture.

  • Cook on low for 4-6 hours or on high for 3-4 hours. (I prefer low).

  • Shred chicken in slow cooker. Place cream cheese over chicken to soften. Cover and turn the slow cooker to low for 30 minutes.

  • Add cream cheese and serve chicken mixture over Mexican rice or pasta or tortillas.
