This recipe tastes like Rio Cafe and Jalapeno Cilantro Lime Rice! This is a simple and delicious rice, perfect for salads, burritos or tacos. Now you can make this delicious lime rice at home!

This mimic recipe is very simple and only takes a few minutes to prepare. It is great to make and serve burritos or as a side dish in any Mexican meal, such as chimichangas or enchiladas.

Earlier this week, I shared a recipe for Cafe Rio Shredded Chicken. It obviously comes from one of our favorite restaurants, Cafe Rio, which is a very delicious chicken recipe, perfect for burritos, chimichangas and tacos.

Today, I will share another recipe for Cilantro Lime Rice from two favorite restaurants (Cafe Rio and Chipotle). I have never eaten this kind of rice before going to any of these food chains, but it is definitely my favorite.

We have always had standard Mexican red rice, but this coriander lime rice has a unique flavor that we really like, and it’s easy to make.

We like to have a burrito bar at dinner to add our creations, but kids like to eat it like tacos and quesadillas. This is really a great side dish, perfect for all your Mexican meals.

If you want to use it to make burritos like we do, just make some flour tortillas (we actually like to buy uncooked pre-made tortillas that only need to be cooked) and prepare some meat (the chicken recipe is in Here, the sweet pork recipe is here), add this rice and add all the ingredients such as sour cream, coriander, cheese and the coriander ranch seasoning of Rio Cafe.

It will seriously become the favorite meal of the new family!

How to make cilantro lime rice

The reason I like to make this cilantro rice is that it is very fast (up to 30 minutes) and low maintenance costs. You don’t have to sit down and stir it, you just need to cover it and let it simmer slowly! This recipe has only 3 simple steps.

To start, pour all the ingredients into a large saucepan and bring to a boil.

Close the lid, reduce the heat, and cook for about 20-25 minutes or until the rice is cooked through. You may need to stir it once or twice at the end to make sure everything is cooked evenly.

When finished, fluff and eat while hot.

What kind of rice is best for Cilantro Lime Rice? You can use your favorite rice to make this coriander lime rice recipe! But here are some suggestions:

  • Basmati rice
  • Super long grain white rice
  • Jasmine Rice
  • Brown basmati rice
  • Long grain brown rice

Can you use brown rice? Yes, you can. Brown rice does not absorb water like white rice and can be used in this recipe. Please note that you may need to cook for another 5-10 minutes.

Can you freeze cilantro lime rice? If you have leftover cilantro lime rice or you want to make this recipe ahead of time, you can definitely freeze it.

After the rice is completely cooked, let it cool to room temperature. Divide the rice into the amount you want, and put them in a sealed freezer-safe bag. Freeze for up to 3 months.

How to reheat? If you want to reheat frozen cilantro lime rice, thaw it in the refrigerator. Then transfer to a microwave safe container and heat in the microwave for 4-6 minutes. Do the same with the leftover cilantro lime rice in the refrigerator.

How long can the coriander lime rice be kept? It can be stored in the refrigerator for up to 3 months and in the refrigerator in an airtight container for 3-4 days.

  • 4 cups chicken broth
