Cinnamon Quick Bread | Little Luna
If you love Snickers, this bread is for you! The wonderful flavors of cinnamon and sugar swirl into a moist, delicious yeast-free batter that bakes to perfection. Breakfast is great and goes well with your morning coffee or tea!
Cinnamon toast was one of my favorite snacks as a kid. To this day, the combination of cinnamon and sugar is reminiscent of after-school snacks and cozy snow days. The baking aroma of this delicious cinnamon quick bread is simply delightful and brings back all the nostalgia of childhood.
This cinnamon sugar quick bread is super easy to make. Unlike regular sourdough bread, this quick bread requires no yeast or fermentation time. It’s super moist, a lot like coffee cake, and with loads of cinnamon sugar, it also reminds you of Snickers cookies!
The batter has a layer of cinnamon sugar in the middle, then sprinkle a layer of cinnamon sugar on top. When swirled together in the batter, you’ll find a nice cinnamon swirling in the middle of each slice!
A slice of bread is perfect for a morning coffee or a delicious afternoon snack. Packaged and packed into your kid’s lunchbox for a fun surprise, or a warm treat straight from the oven.

- 2 cups flour
- 1 1/2 cups granulated sugar divided
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 egg
- 1/4 cup vegetable oil
- 1 tablespoon cinnamon

Preheat oven to 350 degrees. Line a 9×5-inch loaf pan with parchment paper. Set aside.

In a mixing bowl, whisk together flour, 1 degree Celsius. sugar, baking soda and salt. In a separate bowl, combine buttermilk eggs and oil. Mix wet ingredients into dry ingredients until combined. The batter will be a bit lumpy.

In a small bowl, combine remaining ½ c. sugar and cinnamon.

Spread ½ of the batter on the bottom of the loaf pan. Sprinkle ½ of the cinnamon sugar mixture on top of the batter. Spread remaining batter over cinnamon mixture. Sprinkle remaining cinnamon mixture over batter. Use a knife to cut through the batter and swirl.

Bake at 350 degrees for 45-50 minutes. Test with a toothpick – when inserted, the toothpick should be clean and free of crumbs. Cool in pan for 10 minutes. Using the parchment paper sticking out, lift the loaf out of the pan. Let it cool completely.
