Tips, Changes + Stored Information

Fresh cherries: When working with fresh cherries, skip the dough step. Instead, pit the cherries and dip them in plain, milk, or dark chocolate, depending on your preference.

Cherry Sweat: These cherries will only keep for a day or two before they may start to “sweat” (condensation buildup), so keep that in mind when making them or wrapping them as gifts. Cherry “sweat” can be prevented by drying the cherries well before assembling the snack, as if there is any leftover liquid on the fruit, it can cause the chocolate to stick and not sit well on top of the filling. Another trick is to get the cherries out of the fridge, in addition to helping the chocolate set. If they are in a drier place, they are less likely to sweat.

Variety:

  • Drizzle each cherry with melted candy coating or chocolate.
  • If you want more flavor, use white chocolate flavored with black cherry juice!
  • Use melted chocolate or melt some chocolate chips with some coconut oil or butter. Whichever method you choose, make sure to apply a thin, even coat to the cherries.
