Chicken Burrito Bowls Easy + Delicious
This Chicken Burrito Bowl is super easy and just for your taste. It’s a light, healthy, filling meal!
The combination of grilled chicken, fresh vegetables, rice, and taco ranch dressing makes for a delicious bowl. To change it up, you can finish it off with a delicious Cilantro Lime Dressing or Coffee Rio Cilantro Dressing. Ok! !
burritos without tacos
Hi Lil Luna readers! It’s Jen from Yummy Healthy Easy and I’m sharing a crazy delicious recipe today! Raise your hand if you like burritos! I love them, but sometimes I like to change things and try new things.
Today we ditched the tacos and put everything we love about burritos into a delicious chicken burrito bowl! This recipe is easy enough for what you like.
I layered brown rice, black beans, and lettuce with a few spoonfuls of my favorite things like corn, avocado, shredded cheese, green onions, cilantro, and tomatoes. You can choose the toppings you like and finish it off with a delicious grilled chicken and some taco sauce! so good!
Garlic Lemon Marinated Chicken
I think I’m one of the few people in the world who doesn’t like chicken. I can’t just pull a chicken breast out of the fridge and cook it. It needs to have a lot of flavor. So I marinated the chicken overnight (but even just for a few hours!) in a garlicky lemon marinade, then I grilled it. You can also fry it, but I love the flavor the grill gives the chicken.
Some tips for grilling chicken:
- One of the best techniques for grilling chicken is to make sure the entire chicken breast is the same thickness. You can mash it up before roasting so it cooks evenly.
- Heat chicken over medium heat.
- Be sure to put the lid on the grill while cooking or it will take longer as the heat loses.
- Using a thermometer, place it on the thickest part of the thickest breast and make sure it reads 165 or higher.

This is a very easy recipe that you can change up by adding anything you or your family likes. Another bonus is that you can pack ahead to take to school or work and eat later.
Make sure to separate the rice, black beans, veggies, and veggies among Tupperware containers. Separate the dressing and chicken from the rest of the bowl to keep everything crispy.
To store leftovers, Separate the chicken from the salad so the chicken doesn’t get mushy from the excess water in the salad.

chicken marinade
- 3 boneless skinless chicken breasts
- 2 cloves garlic chopped
- 1/2 cup diced red onion
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/3 teaspoon pepper
- 1/4 teaspoon dried oregano
- 1/2 cup coriander leaves
- 1/2 cup olive oil
Burrito Bowl Topping Suggestions
- cooked brown rice
- Drain and rinse black beans
- chopped lettuce
- corn
- diced avocado
- grated cheese
- green onion
- coriander
- tomato
- salsa
Rancho Taco Sauce
- 1 tablespoon ranch seasoning
- 1 teaspoon taco sauce

Place the marinade (except chicken) in a food processor or blender and blend until well combined.

Place chicken breasts in a large resealable bag. Pour the marinade over the chicken, seal the bag, and marinate in the refrigerator for a few hours.

Roast chicken until internal temperature reaches 165ÂşF. Remove the grill and take a break.

Meanwhile, prepare your burrito bowl by layering the rice, black beans, and lettuce. Add a scoop of any desired topping.

Slice cooked chicken thinly and top with burrito bowls.

In a small bowl, combine the ranch and taco sauce. Taste and add more ranch or taco sauce. (I double this recipe and drizzle as I eat each layer of the bowl.)

Drizzle the chicken with ranch taco sauce and/or salsa and enjoy!
