Chewy Butterscotch Brownie Recipe | Little Luna
The chewy butterscotch brownies are based on brown sugar and filled with butterscotch chips. They are rich and absolutely delicious!
Butterscotch brownies have similar foundations to blondes and are outside of this world! They are great for sharing or stacking on your own plate. If you are looking for a chocolate version, try Fudgy Brownies or Nutella Brownies.
Brownie or blonde?
Butterscotch brownies can also be called Butterscotch Blondes. The blondie flavor comes from brown sugar instead of the white sugar and cocoa powder in traditional brownies. Either way, the delicious brown sugar base and chewy texture combined with butterscotch is absolutely irresistible.
It’s almost a caramel-like flavor, I think it’s delicious! Pairing it with butterscotch fries will only take this dessert to the next level. This is definitely a beloved treat in our family.
These bars are great for sharing, and we like to cut them out and take them to parties or other events. The plates are always empty, so you know they are good!
How to make butterscotch brownies
Prepare. Prepare a 9×13 baking sheet, line it with parchment paper, and preheat the oven to 350°F.
Wet ingredients. Put the butter in a large bowl and melt it. Add the brown sugar and white sugar to the bowl and mix. Add eggs, egg yolks and vanilla.
Dry ingredients. Sift the flour in a separate bowl. Add cornstarch, baking powder and salt, and mix well. Slowly stir the flour mixture into the sugar mixture until completely combined.

bake. Pour the batter evenly into the pan and bake for 25-28 minutes. Take it out of the oven and add some butterscotch slices on top while it is still hot. calm down. Cut it with a plastic knife and enjoy!

- Light brown sugar: 1 cup white sugar + 1 teaspoon molasses.
- Dark brown sugar: 1 cup white sugar + 2 teaspoons molasses
- Mix it together with a fork, then use your fingers to rub the molasses evenly into the sugar.
