First pop the rice and put it in a bowl, making sure there are no unpopped corn kernels there. Set aside.
Melt butter in a medium pot over medium heat. Add the brown sugar and corn syrup until well combined. Add the marshmallows and keep stirring over low heat until all are melted.
Pour the mixture on the popcorn and stir well. Spread popcorn on parchment paper or put it in a greased baking pan and place.

How many mini marshmallows should I use instead? You can replace the big marshmallows with mini marshmallows with a ratio of 1:10. So for this recipe, you need 200 mini marshmallows or about 3 cups.
Are there corn syrup substitutes that I can use? There are several options, and although they may change the taste, they have little effect. Replace maple syrup or honey at a ratio of 1:1. In the UK, the closest substitute is “golden syrup.” You can also make your own simple syrup: mix 1/4 cup of water with 1 cup of granulated sugar in a saucepan.
