Burger Soup Made in a Crock Pot!


Hearty and delicious burger soup filled with corn, carrots, potatoes, cheese and more! Best of all, it’s easy to make in the slow cooker.

Delicious, warm soup is always what I crave most when the weather turns cooler. 😉 Having said that, I have another soup recipe for you. The next one is from an old cookbook from my mom.

I’ve never tried burger soup before, but it was a hit! This soup has all the ingredients of the classic soup everyone loves – meat, potatoes and vegetables. It’s also easy to make since it all goes in the slow cooker.

I have a feeling this easy burger soup will be repeated all fall and winter, especially since it’s easy and the crock pot does the heavy lifting. 😉

How to Make Burger Soup

vegetable. Add carrots and potatoes to a saucepan with water and cook on low heat for 3-4 hours. (If you want to make it faster, you can cook it on HIGH for 1.5-2 hours.)

beef. Meanwhile, brown the ground beef. Once the potatoes and carrots are cooked, add the browned beef and remaining ingredients to the saucepan.

Cook. Cook on LOW for another hour (or HIGH for 30 minutes). Add a cup of cheese just before serving.

Let’s talk vegetables

This soup is very versatile. Almost any vegetable can be used. The key is to add them at the right time. Not all vegetables cook at the same rate.

  • Larger cut vegetables take longer to cook, so add them first. Save small and chopped vegetables for later.
  • Potatoes: Stay away from russet potatoes that are higher in starch and have a grainy texture. Stick with red, Yukon Gold, fingerling, or landrace potatoes.
  • Save time and use frozen mixed vegetable bags

How much money a person earns: If the soup is the main course, the serving size is 1 ⅓ c. If the soup is an appetizer, the serving size is 1 cent per person.

How to store leftovers: Burger soup will keep for 3-4 days in the refrigerator. Reheat in the microwave or on the stove top.

can this be frozen? Yes, if you plan to freeze this soup, be sure to undercook the vegetables. Let the soup cool completely. Place in freezer-safe container with 1 inch of headspace. Store for 4-6 months. Thaw in refrigerator.

  • 2 carrots peeled and sliced
  • 4 potatoes, peeled and diced
  • 2 cups water
  • 1 pound ground beef cooked
  • 14 oz can beef broth
  • 12 oz can diced tomatoes, drained
  • 2 tablespoons sugar
  • 11 oz canned corn
  • 1 tablespoon taco seasoning
  • 1 cup grated mozzarella or parmesan
  • salt and pepper to taste
  • Add carrots, potatoes and water to your crock pot. Cook on low for 3-4 hours (or 1.5-2 hours on high).

  • Brown the beef and add the beef and remaining ingredients to the crock pot. Cook on low for another hour or on high for 30 minutes. Add 1 cup cheese a few minutes before serving. Please enjoy!
