How to make bacon pancakes

Pancake batter. In a large bowl, mix all the dry ingredients together. Then mix all the wet ingredients together in another bowl. Then pour the wet ingredients into the dry ingredients and mix well. It is fine if there are some small to medium bumps in the pancake batter. Set the batter aside while cooking the bacon.

  • 1 cup all-purpose flour scooped flat with a spoon
  • 2 TB sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/4 cups buttermilk
  • 2 TB unsalted butter melted
  • 1 kg of eggs
  • 8 slices bacon
  • Preheat the baking tray to 200 degrees.

  • Whisk all the dry ingredients (flour, sugar, baking powder, baking soda, and salt) together in a bowl.

  • In a separate bowl, whisk together the wet ingredients (buttermilk, melted butter, and eggs).

  • Stir the wet and dry mixture together until it becomes wet and has small to medium lumps.

  • Fry the bacon in a pan over medium-high heat until golden and crispy on both sides. Soak up the bacon with a paper towel; save about 1 teaspoon of fat from the baking pan.

  • Add ½ cup of batter to the pan at a time and heat over medium heat. Put a piece of bacon on top. Cook until golden brown, about 2 minutes per side. Repeat with the remaining batter, adding more bacon fat if needed. Place the bacon side up and drizzle with maple syrup.
