Blueberry Square Pie Recipe (aka “Lazy Pie”)

Here are the ingredients you need to make this delicious square cake!
- Blueberries – Fresh is best, especially when they are in season.

- Lemon Juice – You can use bottled lemon juice or freshly squeezed juice.
- butter
- Pie Dough – Refrigerating pie dough works well and saves a lot of time, but you can also use homemade pie dough.
How to Make Blueberry Squares
Prepare: Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone baking mat.
gather: Place blueberries, sugar, flour and juice of ½ lemon in a bowl, mix well and set aside. Roll out the pie dough to a 14-inch diameter, then spoon the berry mixture into the center of the dough. Fold in edges and top with dots of butter.
bake: Bake for about 30 minutes or until crust is golden brown.
Can I use frozen fruit? Yes, but it is best to use fresh. If you do use frozen food, thaw first and drain off excess juices before starting. Otherwise, the case may become wet from too much liquid.
Storage and serving tips
Just remember a few things…
- Cover and store in the refrigerator for up to 3 days. If desired, reheat slightly in the microwave.
- Before serving, remove squares from oven and let stand for 5-10 minutes.
- Serve hot with vanilla ice cream.

- 4 cups fresh blueberries
- ÂĽ cup sugar
- 1 tablespoon all-purpose flour
- Juice of ½ lemon
- 1 tablespoon butter
- 1 (9″) refrigerated pie crust (store bought or homemade)

Preheat oven to 425°F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.

Combine blueberries, sugar, flour, and lemon juice in a large bowl; set aside.

Roll the pie dough into a 14-inch circle and transfer to the prepared baking sheet. Scoop the blueberry mixture into the center of the dough, leaving a 3-inch border. Fold this border over the fruit. Butter in the center.

Bake for 25-30 minutes or until crust is golden brown. Let stand for 5-10 minutes before serving.
