Dinner Roll Tips

quantity: Dinner rolls tend to vary in size, so plan to have 2 dinner rolls per guest. If you serve larger cookies, plan for 2 per person. If you serve smaller cookies, plan for 3 per person.

rise: Make sure to allow proper rise time, otherwise the fluffy rolls will be flat and dense. Often, proofing is the most time-consuming aspect of making rolls. You can speed up the proof time by creating a warmer environment.

  • If I have my crock pot then I like to prove my rolls next to the warm pot. I put a tea towel over the pan and the rising roll.
  • Heat the oven to 200° and turn it off. Place a wet tea towel over the dough bowl. (Make sure the bowl is oven safe) Put the covered bowl in the oven.
  • Heat a bowl of water in the microwave until it boils. Remove the water and place a bowl of dough in a moist warm microwave. Do not turn on the microwave.
  • Fireplace or wood stove: Cover the dough with a tea towel and place it near the fireplace/stove. Make sure the towel doesn’t catch fire.

knead: Like bread, it requires a lot of rolling. The quickest and cleanest way is to use an electric mixer, but you can also knead by hand.

  • Electric mixer: Generally, dough kneaded with a dough hook should be kneaded on medium-low speed for about 5 minutes.
  • It may take 10 minutes to knead by hand.

Forming uniform roll: One of the easiest ways is to roll out the dough into a rectangle of the same thickness. Use a pizza cutter to cut the rectangle into equal-sized squares. I stick with about 1″ cubes. From there you can roll each square into a ball. Remember that the dough balls will expand to double in size before baking and will expand a little in the oven.

keep dinner rolls warm: Use dry beans! Wrap the dried beans in a kitchen towel, then microwave the packets until hot. Put the hot beans in the bottom of the basket, you may need to line it first. Place a napkin on top of the beans, then add to the rolls. Cover the rolls.

When it comes to cookies, keep these tips in mind:

  • use cold butter or shortening. Butter should be the size of a small pea when cut into flour.
  • less is more. The more dough you work with, the more gluten you have. This is great for rolls but not so great for cookies. Mix the ingredients until just combined into a solid mass. Be gentle when rolling and cutting the shake.
