Spaghetti Squash with Feta and Tomatoes
I’m crazy about this spaghetti squash recipe because it tastes incredible! I love the taste of today’s spaghetti squash with a mix of several ingredients to give it a delicious Greek twist. We love our classic spaghetti recipes, but we’re obsessed with roasted spaghetti squash because it’s healthy and delicious! You can never have too many delicious recipes that are also good for you.
But what is spaghetti squash?
- It is an edible squash with a slightly sticky pulp that resembles spaghetti in texture and appearance when cooked.
If you haven’t tried it, you must. When you first cut it, it smelled a bit like pumpkin. But I assure you, after it’s baked, it just skewers and starts to look like noodles. It’s kind of crazy. You can enjoy it in many different ways, but our current favorite way to enjoy it is with some fresh ingredients.
I love that this recipe takes the word “pasta” to the next level. There are some really tasty toppings in this particular spaghetti squash recipe that make it so delicious. I’m talking feta cheese, sliced olives, juicy chopped tomatoes, some garlic, a little olive oil and fresh basil. Really tasty! !
How to Cook Spaghetti Squash
You can have fully cooked spaghetti squash in 45 minutes. How amazing is this? Don’t be implied by cooking spaghetti squash. It’s easy, I promise! First preheat the oven to 350 degrees.
Cut your spaghetti squash in half lengthwise to remove all seeds. Place the spaghetti squash halves cut-side down on a lightly greased baking sheet. Roast the squash for about 30 minutes or until a knife can be inserted easily.Once baked, remove it from the oven and let it cool for a few minutes before skewering

- 1 spaghetti squash, halved lengthwise and seeded
- 2 TB vegetable oil
- 1 teaspoon minced garlic
- 1.5 cups chopped tomatoes
- 3/4 cup crumbled feta cheese
- 3 TB sliced black olives
- 2 TB fresh basil chopped
Preheat oven to 350 degrees.
Place spaghetti squash cut-side down on a lightly greased baking sheet. Bake for about 45 minutes, until a sharp knife can be inserted with little resistance. Remove from oven and cool.
Meanwhile, in a large frying pan, sauté garlic in hot oil for 1-2 minutes.Stir in tomatoes and cook until heated through
