Muffins are our house’s go-to, portable favorite.
They’re great as a snack, breakfast or even dessert.
Whether you like fruity or spiced, I have the perfect muffin recipe for you! Made mini or queen size, either way, they’re the perfect takeaway for the busiest of families. They freeze well too, so don’t be afraid to whip up a whole bunch, or two! !
Before I get into the recipe, I have a lot of muffin-making tips for youâŠ
General muffin making tips
Keep these tips in mind when making muffins:
- Baking is a science, so measure accurately and combine ingredients as directed in recipes. Seemingly simple changes can affect results.
- Use substitution with care. Some may affect the final result.
- No need for an electric mixer. Most muffins can be mixed easily by hand. This also helps ensure you don’t overmix the muffins.
- Mixing the dry ingredients together separately helps ensure you don’t overmix the batter.
- If the recipe doesn’t state otherwise, a good rule of thumb is to fill your muffin cups â full.
- The toothpick test is the easiest way to test if a muffin is done. Just insert a toothpick into the center of the muffin and if the muffin comes out with just a few misty crumbs, it’s done. You may need to retest if you insert it into the more liquid part of the muffin (such as blueberries).
liner: For a crispier muffin, leave out the liners. Simply spray the muffin tin with cooking spray and add the batter directly to the pan.
I usually use liners because they make cleanup easier. A high-quality paper liner can be peeled right off the muffin without carrying a layer of it. You can also invest in reusable silicone liners.
If you want to make giant muffins but don’t have a large muffin pan, you can easily use freestanding paper baking cups. They can be placed on cookie sheets and they will hold their shape.

Easily add delicious ingredients: The great thing about muffins once was that they could easily add more delicious flavor and texture.
- A favorite way is to top the batter with chopped nuts or toasted coconut before baking.
- Baked fries are also easy to add. There are many different flavors and sizes for you to choose from.
- Dried fruit adds great flavor and texture without changing the batter.
Add fresh fruit: Many recipes call for fresh fruit, mostly fresh blueberries. If the recipe doesn’t call for fresh fruit, I’d hesitate to add it. The liquid in the fruit changes the way the batter behaves. You can’t just add fresh fruit without adjusting other ingredients to compensate.
When a recipe does call for fresh fruit, a little trick I’ve found is to toss the fruit in a little flour. A quarter cup of flour for every 2 cups of fruit should do the trick. The theory behind this is that the flour layer helps keep the fruit from suspending in the batter instead of sinking to the bottom.

Jumbo muffins, regular (cupcake-sized) muffins, and mini muffins can usually be made with any muffin recipe.
- mini: Small cans will need about 2 tablespoons of batter. Typically mini muffins bake for 8-10 minutes. This is about 5-8 minutes less than called for in the standard size recipe.
- Regular: A regular can requires about â -Âœ cup of batter. Standard size muffins usually take 18-22 minutes.
- super: Giant muffins need about 1 cup of batter. Giant muffins take about 20-24 minutes. You can also add about 8-13 minutes to the time listed in the standard size recipe.

storage: The muffins are relatively moist, so I would put a paper towel in the bottom of the container before adding the muffins. This will help keep the muffin tops from getting soggy and sticky.
Freezable: I like to eat muffins in the refrigerator. When I get up, I can just pull some and they’ll heat up for breakfast. I also love being able to throw one in my kid’s school bag as a snack. After the muffins have cooled, I wrap each muffin in plastic wrap or place each muffin in a collapsible sandwich bag. Then, I put them together in a Ziploc in the refrigerator. They usually keep for about 3 months in the refrigerator.

Healthy Muffins
While the options may be few, these recipes are lighter and have healthier ingredients. You can also try the following to make any muffin recipe healthier:
- Substitute applesauce for butter/oil
- Reduce the amount of sugar.
- Substitute whole wheat flour for white flour, or a mixture of the two.
- Add fresh fruit or vegetables. You may need to add more flour to compensate for the added moisture and increase the baking time slightly.
