I know yeast can seem intimidating, so before getting into our favorite sourdough bread recipes, Here are some tips for using yeast:

Yeast 101

It is important to understand the difference between the two yeasts.

  1. Active dry yeast: Active dry yeast should be dissolved in warm water (100°F to 110°F).It should start bubbling and bubbling within 30 seconds to judge if it works, this is called yeast bloom. It is best for recipes that require long or double fermentation.

Most sourdough bread recipes require rise or rise time. This gives the yeast time to grow and create small air pockets in the dough. Dough that doesn’t rise long enough is flatter and denser. Usually you leave the dough until it doubles in size.

Warmer environments ferment dough faster than colder ones. You can leave the dough to rise too long and cause the puffed dough to collapse inward, so be sure to check the dough regularly.

By hand: When kneading by hand, turn the dough out onto a lightly floured surface. Add a little flour at the beginning, but be careful not to add too much. Fold the dough in half and press forward with the heels of both hands. Turn dough, fold and press. Repeat for about 6-12 minutes unless the recipe states otherwise.

With Electric Mix: Many people like to knead dough with their electric mixer. Be sure to use the dough hook and don’t over-knead the dough. Blend for 5-10 minutes while kneading in a blender.

When the dough is kneaded enough, it will feel elastic and won’t break when you pull on it. When it forms a ball, it also keeps its shape and doesn’t fall between your fingers.

I don’t live at high altitude so I had to google this. Here are some commonalities I’ve found in sourdough bread making:

  • Yeast dough rises 25% to 50% faster at high altitudes. Start checking the dough halfway through the rise time listed in the recipe.
  • Dough dries faster at higher altitudes. When it’s ready to prove, you can lightly grease the top of the dough and cover with cling film sprayed with cooking spray.
  • Baking temperature and time should not vary much. However, the bread may brown faster. If it browns too quickly before the inside is done, place a piece of tent foil over the loaf as it finishes baking.
