Healthy, Easy Appetizers

I absolutely love finding recipes that I think are delicious and are actually healthy too. I think the main reason is because I tend to like foods that don’t treat you well (french fries, steak, fried foods – I’m working on that). 😉 I do love salads and have been trying to eat healthier over the years and one vegetable I have learned to love is cucumbers. I know a lot of people might say it doesn’t have a lot of flavor, but I think they’re juicy, filling and the perfect addition to many recipes.

I’ve seen cucumbers used as cups filled with different ingredients and thought I’d try making some Greek cucumber cups. They ended up being a huge hit and are the perfect appetizer or side dish for any function. I stuffed mine with cherry tomatoes, chicken, olives, feta cheese and greek dressing and it was the perfect amount to give it a ton of flavor, but it was still healthy. I know you can fit endless food combinations in these cups, but this Greek version is so delicious and so easy! !

Greek Cucumber Cups

filling. In a bowl, mic cherry tomatoes, chopped chicken, olives, feta, Greek sauce, salt and pepper.

cucumber. Partially peel the cucumber, leaving a strip of skin along the entire length of the cucumber. Trim the ends of the cucumbers and cut each cucumber into slices 1 – 1.5 inches thick. Use a peeler or spoon to scoop out the center of each slice, leaving a crust.

Combination + service. Spoon about 1 tablespoon chicken mixture into cucumber cups. Garnish with extra cilantro and feta, if desired. Please enjoy!

cucumber: An easy way to form a cucumber cup is to use a melon cutter to scoop out the center. Also, I like the look of the peel part I leave behind, but you can choose to peel the whole cucumber.

Chick: Use shredded/shredded rotisserie chicken instead of cooking and shredding your own chicken breasts.

Other great fillers: These cucumber cups can be used as the base for many other delicious fillings, such as:

shop Seal remaining cups in container. They will keep for 2-3 days in the refrigerator. Do not freeze.

in advance: Slice and scoop into cups ahead of time. You can also assemble the filling ahead of time. Store them in separate containers in the refrigerator for up to 2 days.
