Spaghetti squash has become one of our favorite dinners. Whether you use it as a pasta substitute for classic spaghetti or on its own in our Greek version, you can’t go wrong!

Spaghetti squash is an edible pumpkin with slightly silky flesh. When it is cooked, it has the texture and appearance of spaghetti!

I think its taste is incredible, and I like the tender silk it produces. The option of substituting real pasta (or any pasta related to this) for a low-carb option is great.
