Delicious and healthy Parmesan zucchini is made from zucchini spears, coated with Parmesan cheese, and baked to perfection. This is a great side dish for any meal.

Grilled Parmesan Zucchini

This year my husband and I are actually trying to eat healthier. Having said that, we have been trying to incorporate more vegetables into dining out.

We have always liked zucchini as a side dish and wanted to try some parmesan zucchini spears (now favorites are the zucchini boat and grilled zucchini slices).

We are very happy that we came up with a recipe for this, because not only can they be put together quickly (just a few minutes), but they are so delicious that they are a great match for any meal.

To be honest, even if I don’t want to stay healthy, I will eat these things because they are so delicious. They were inspired by one of our favorite restaurants, the fried Parmesan zucchini sticks from Claim Jumper.

We think this is the healthy version and make these every week because we like them very much (if you like fried food, you can check out our fried zucchini).

How to make Parmesan zucchini

As mentioned earlier, this recipe is quick and easy.

Prepare. To start, preheat the oven to 350 degrees. Cut the zucchini into quarters lengthwise and set aside. Line the baking sheet with foil and spray.

Drizzle and season. Place the zucchini on a baking sheet and drizzle with olive oil. If you want, you can even use spray butter. Sprinkle with grated Parmesan cheese and any other desired spices. Some of our favorites include:

  • Garlic salt
  • black pepper
  • Dried coriander

bake. Bake for 12-14 minutes, and finally for 2 minutes, until the cheese is more cooked.

Can you cut the spear into a round shape? Yes, you can! Be sure to put the zucchini in a single layer on the foil. You will also need to shorten the baking time to about 8-10 minutes, but this will vary depending on the thickness of the circle you cut.

How to store Parma zucchini? After baking, you need to store it in an airtight container or bag, and then put it in the refrigerator for up to 3-4 days. Reheat by putting it in the microwave, or we prefer to reheat in the oven for a few minutes (or even bake)
