Divide the cream cheese mixture and provolone cheese equally on the bread slices, and then spread the mixture evenly on the bread. Put another slice of bread containing cheddar cheese on top of each.
Cook. Heat a large frying pan or electric grill pan until it is hot, about 5 minutes. When the frying pan is heating up, brush the outside of each sandwich with garlic paste. Place the sandwich on a pan and heat until the cheese is melted and the bread is golden brown, about 2 minutes per side.
Using a heavy-bottomed saucepan or hotplate really helps the sandwich to cook and brown evenly. Some people like to grill cheese with a panini press, but because this particular recipe is full of delicious sauces and cheese, the heavy panini press will only let it ooze out of the sandwich.
Make sure not to exceed medium heat. You don’t want the bread to burn before it melts inside.
