They’re one of our favorite appetizers and a guilt when we go out to eat. Potatoes, cheese and bacon are irresistible. do you agree? ? Well I finally figured out how to make these at home a few years ago and they are amazing! ! Since hubby and I both love sweet potatoes, I thought I’d try making a sweet potato skin version and it turned out even better than I thought. They are so delicious and addicting! In fact, I probably like them better than regular potato peels.

The trick to making a delicious peel is to make sure the peel tastes as good as the rest of the potato. That’s why we ended up making them parmesan crust. It adds so much flavor to the whole recipe that anyone who has tried it will comment on how delicious the whole potato is.

This recipe is definitely for anyone who loves sweet potatoes. Even better if they like potato skins too. This recipe makes the most delicious crust and can be used as a side or appetizer at any party!

How to Make Sweet Potato Skins

Prepare. Preheat oven to 400.

bake. Pierce the potatoes with a fork and place on a foil-lined baking sheet. Bake for 45-50 minutes. Let cool completely when done. Cut potatoes lengthwise and scoop out 1/2 of the pulp. Place on a foil-lined baking sheet.

filling. In a small bowl combine oil, parmesan cheese, salt, garlic powder, paprika and pepper. Stir well.

bake. Brush this mixture over the top and bottom of each potato skin. Bake at 400 degrees for 15 minutes.

Decor + service. Cut in half horizontally. Add cheese and bacon and bake 3-4 minutes more. Sprinkle with green onions or chives. Serve hot with ranch or sour cream.

Do not discard the sweet potato puree you scooped out. It can be used in other delicious dishes such as:
