We love chicken tacos, but sometimes we leave in the middle of the day and these slow cooker tacos are just the thing. Make this with your favorite meat, substituting the chicken for pork or beef.

Chicken Tacos in a Crock Pot!

You guys know how much we love Mexican food!

We’ve been making and eating tacos for as long as I can remember, and we used to always have tacos. We wanted to come up with another recipe that was delicious but didn’t require deep frying and decided a slow cooker was the way to go.

With a sauce and seasoning mix and chicken cooked in a crock pot, today’s recipe happens to be so delicious and easy. This is definitely a great way to prepare dinner in no time, perfect for school days or even crazy days.

How to Make Slow Cooker Chicken Tacos

We love using our homemade salsa recipe for these Crockpot Chicken Tacos, but store bought works too!

Simply combine salsa, lime juice, taco seasoning and cilantro in the slow cooker. Place chicken breasts on top of salsa mixture and sprinkle with garlic salt and pepper. Spoon the salsa over the chicken breasts, cover and cook on high for 3-4 hours or low for 7-8 hours.

When done, remove the chicken from the slow cooker, shred with a fork, and serve back in the slow cooker, making sure to heat the slow cooker.

You can serve this delicious chicken in tortillas, flour tortillas, or even lettuce wraps.

To crisp up tortillas: Add olive oil to a frying pan. Heat the tortillas until they are hot and crispy. Put it on a paper towel.

Instant Pot Instructions: Easy and quick to make in the Instant Pot, chicken gets tender and delicious.

  • Cook manually and set timer to 5-8 minutes. (Check your manual for specific times) The pot will take about 10 minutes to pressurize and then start the countdown.
  • When the pot beeps, let the steam out before removing the lid.

  • If you are using bones in chicken, be sure to remove the skin.
  • Replace the chicken with an equal amount of beef or pork
