This is one of the easiest chicken recipes you’ll try, but it’s also so delicious that you’ll want to make it again and again. All you need for this recipe is chicken breast, pesto, cheese and tomatoes.
You can add or remove as needed depending on your preference for pesto. Since we love pesto, we didn’t skimp. And, of course, we always tend to add more cheese, and I don’t feel bad about that. 🙂 No matter how much pesto or cheese you add, you really can’t screw up this recipe. Only a few ingredients, but the results are amazing!
two step recipe
This recipe is easy. The chicken does take about 40 minutes to bake, but the actual prep only takes a few minutes!
pesto. In a medium bowl, toss the chicken with the pesto (if you want to make your own basil pesto, try this recipe!). Place chicken on a baking sheet and bake at 400° for 35 minutes or until cooked through.
cheese and tomato. Remove from oven and top with tomatoes and cheese. Bake for another 5-7 minutes or until cheese is melted.
Serve. You can serve this chicken on its own or with rice, pasta or pasta like angel hair or healthy zucchini noodles.

go ahead. Make the chicken according to the directions except adding the tomatoes. Save these to add before baking. Store in one of the following ways:
- Refrigerator: Cover the baking sheet with plastic wrap and store in the refrigerator. Store for 1-2 days.
- Freezer: Place chicken in freezer-safe airtight container labels and freeze for 1-3 months. Thaw overnight in the refrigerator. Bake according to recipe instructions.
storage. Place leftover chicken in an airtight container and keep in the refrigerator for up to 4 days. Reheat in the oven or, if you’re in a hurry, in the microwave.

- 4 boneless skinless chicken breasts
- 1/2 cup frozen basil pesto
- 1 cup grated mozzarella cheese
- 3 plum tomatoes sliced (optional)
Preheat oven to 400.
Line a baking sheet with cooking spray with foil. In a medium bowl, toss chicken and pesto together to coat.Roast chicken on a baking sheet for 35 minutes or until cooked through
Remove from oven and top with tomatoes and cheese. Bake for another 5-7 minutes or until cheese is melted. Service warm and enjoyable!
