  • 2 sheets of puff pastry, thawed
  • ½ cup raspberry jam (60 g)
  • 1 cup shredded Gruyere (100 g)
  • 10 slices ham, halved
  • 1 large egg, beaten
  • powdered sugar, for dusting

Prepare

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry, then cut into 1.5-inch wide strips.
  3. Brush each strip with raspberry jam.
  4. Lay a half slice of ham on the pastry strip with the straight edge in the center of the strip and the curved edge hanging over the edge of the pastry. Fold exposed pastry over ham. Sprinkle some Gruyere cheese over the ham. Starting at one short end, roll the pastry into a tight spiral. If desired, secure the ends with toothpicks. Transfer to prepared baking sheet and repeat with remaining ingredients.
  5. Brush pastry roses with beaten egg.
  6. Bake for 12-15 minutes, until golden brown.
  7. Transfer pastry roses to a plate and sprinkle with powdered sugar.
