- 3 tablespoons water
- 1 tablespoon flax flour
- 1 head of broccoli, broken into florets
- 3 carrots, sliced
- 1 head cauliflower, chopped into florets
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon onion powder
- 3 cloves garlic
- 2 cups breadcrumbs (230 g), divided

Prepare
- In a small bowl, mix the water and flax flour and stir to combine. Let’s sit for 10 minutes. Set aside until ready to use.
- Preheat the oven to 400ÂşF (200ÂşC). Line the baking sheet with parchment paper.
- In a food processor, mix the broccoli and carrots and stir until finely chopped. Add cauliflower and pulse until chopped.
- Add salt, pepper, onion powder, garlic and flax egg, and stir well. Add 1ÂĽ cup (145 g) breadcrumbs and mix.
- Take about 1 tablespoon of the mixture and knead it into lumps with your hands. Repeat with the remaining mixture.
- Coat both sides of the gold nugget with the remaining Âľ cup (85 grams) of breadcrumbs.
- Bake for 20 minutes, turning halfway through, until golden brown.
- Or, fry in a small amount over medium-high heat until golden brown on both sides, about 10 minutes.
- Let cool for 5 minutes.
