  • 3 tablespoons water
  • 1 tablespoon flax flour
  • 1 head of broccoli, broken into florets
  • 3 carrots, sliced
  • 1 head cauliflower, chopped into florets
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon onion powder
  • 3 cloves garlic
  • 2 cups breadcrumbs (230 g), divided

Prepare

  1. In a small bowl, mix the water and flax flour and stir to combine. Let’s sit for 10 minutes. Set aside until ready to use.
  2. Preheat the oven to 400ÂşF (200ÂşC). Line the baking sheet with parchment paper.
  3. In a food processor, mix the broccoli and carrots and stir until finely chopped. Add cauliflower and pulse until chopped.
  4. Add salt, pepper, onion powder, garlic and flax egg, and stir well. Add 1ÂĽ cup (145 g) breadcrumbs and mix.
  5. Take about 1 tablespoon of the mixture and knead it into lumps with your hands. Repeat with the remaining mixture.
  6. Coat both sides of the gold nugget with the remaining Âľ cup (85 grams) of breadcrumbs.
  7. Bake for 20 minutes, turning halfway through, until golden brown.
  8. Or, fry in a small amount over medium-high heat until golden brown on both sides, about 10 minutes.
  9. Let cool for 5 minutes.
