Lemony Asparagus Pasta Easy + Delicious
This Lemony Asparagus Pasta is so easy, yet full of amazing flavor! Made with macaroni, mixed with asparagus and covered in a cheese sauce with a hint of lemon.
We think asparagus is the perfect addition to any pasta dish. It adds some crunch and flavor that most people love. In fact, we love this combination so much that we’ve added it to other pasta dishes, including Asparagus Cheese Chicken Pasta and Chicken Asparagus Pasta.
Delicious Asparagus Pasta
I’m sure you’ve noticed by now that we are super pasta lovers! We love trying new pasta dishes (like today’s Lemony Asparagus Pasta) and sharing our favorites with you.
The next recipe is a new favorite and I think you will love it as much as we do. I guess we’re a little biased because we love asparagus too, and this recipe has a delicious veggie in it.
This asparagus pasta is delicious, but we thought we’d add some cooked chicken strips to go with it. It reminds me of pasta with chicken and asparagus, but it’s obviously more lemony. Best of all, if you love lemons, pasta, and asparagus, then you’ll definitely want to try this recipe.
How to do it
spaghetti. Cook pasta in boiling water for 6 minutes.
asparagus. Add asparagus and continue to cook until tender (about 3-5 minutes). Drain and return to pot.
Sauce. In a medium bowl, whisk together milk, mustard, flour, salt and pepper. Heat oil in a small saucepan over medium-high heat. Add garlic and cook, about 1 minute, until fragrant and light brown (stir constantly). Pour in the milk mixture and stir. Continue to stir while you simmer. Cook until thickened, 1 to 2 minutes. Add lemon zest and juice.
combine. Stir this sauce into pasta and cook over medium-high heat. Cook until the sauce is thick and creamy. Mix grated Parmesan cheese into pasta.
Serve. Top with remaining Parmesan cheese for a topping.
Variety:
- Sometimes we use macaroni pasta, but sometimes we use gemelli (pasta as pictured). Any kind of pasta you have on hand is great.
- Instead of cooking the asparagus, you can easily sauté it in a pan with a little olive oil.
- Mix in mushrooms, spinach, broccoli, peppers, peas or cherry tomatoes.
