Chicken + Bruschetta
Chicken is probably our family’s most popular dinner item (if you haven’t noticed from the plethora of chicken recipes on the site, such as Chicken Tartlet, Lemon Pepper Chicken, and Parmesan Chicken). While we do have a variety of chicken recipes, I’m always looking for ways to change up chicken dinners.
I recently went through an old post about homemade croutons and thought it would be fun to make a chicken version!
It’s easy to make and tastes delicious in the end. We’ve had it at least once a month for the past few months because it’s easy and I always have the ingredients on hand. I know roast chicken can be a little boring, so it’s nice to change it up and make it differently.

Use pre-made bruschetta as a shortcut for this recipe
Instead of using shredded mozzarella, just let a piece of mozzarella cheese melted cheese on every piece of chicken
Easy Roast Chicken instead of baking it. Simply marinate the chicken and Italian seasoning in a ziploc bag. Remove and bake on medium-high heat for 6-8 minutes per side. Once cooked, top with a slice of mozzarella cheese and continue to cook until cheese is melted (about 1 minute), then remove from grill. Combine tomatoes, olive oil, and basil and spoon over cooked chicken.

- 4 chicken breasts
- 1 c italian sauce
- 3 diced tomatoes
- 1-2 TB olive oil
- 1 teaspoon basil
- 1 c shredded mozzarella cheese
Marinate chicken breasts in Italian dressing for a few hours.
Preheat oven to 350.
Add the diced tomatoes, olive oil, and basil to a bowl and toss to combine.
Place chicken breasts on a foil-lined cookie sheet. Add the desired amount of mozzarella cheese to the chicken breasts (we added about a few TB per chicken breast). Put a few tablespoons of tomato mixture on top.
Bake for 40-45 minutes.
