Homemade Cinnamon Whole Wheat Biscuits | Little Luna

Use this simple recipe to make cinnamon graham crackers at home. They are more delicious than any store bought!

I like to pack these small snacks in my kid’s lunch box, with some homemade peels and a cute note! No matter how many batches I make, the children quickly eat them all.

Better than store bought!

This is Alicia from Baker upstairs, I am back today to share a super delicious homemade delicacy! These homemade cinnamon graham crackers are perfect for school lunches or after-school snacks, or really anytime snacks!

They are really easy to make and are good for you too! I like to think of ways to add more whole grains to our diet, and I have to say that my daughters did not even notice these cute cookies.

They definitely taste like graham crackers, but more delicious than the ones we buy at the grocery store. My seven-year-old can’t wait to take out marshmallows and hershey sticks to make s’mores.

This recipe makes a lot (awesome!) but they disappear surprisingly fast. Guess it’s time to make another batch!

How to make them

Dough. In a large bowl or the bowl of a stand mixer, combine the butter, brown sugar, honey, molasses, and vanilla. Add flour, cinnamon, baking soda and salt, and stir to form a thick dough.

chill. Press the dough into a disc shape and wrap it with plastic film. Chill for one hour (or freeze for twenty minutes).

Prepare. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper or silicone baking mats.

roll. Roll out the frozen dough very thin. (I found that the easiest way is to roll it between a silicone baking mat and a piece of plastic wrap. I believe it will also work if you roll it between two pieces of parchment paper.)

cut. Cut the dough into the desired shape (cookie cutter is fun!) and use a spatula or bench spatula to transfer to the prepared baking sheet. Poke each cookie several times with a fork, then sprinkle with cinnamon sugar.

bake. Bake for 12-15 minutes or until golden brown.

Recipe tips

Whole wheat pastry flour: Whole wheat pastry flour is rich in nutrients and low in protein, which can produce soft and soft baked goods.if you want Make your own pastry flour, Combine ⅜ a cup of whole wheat flour and ⅝ a cup of cake mix.

Can you use this dough to make a graham cracker crust? I don’t know how the dough functions as a crust. Although, once you have baked the biscuits, you can crush them and use them like regular graham crackers to make no-bake biscuit crusts.

Storage: Once the cookies cool, they should Store at room temperature In a sealed container. They should last approximately 3 weeks at room temperature or Freezer 3 monthsOver time, they will become harder but still edible, especially when you soak them in milk.
