Slow Cooker Chicken Tortilla Soup
Because this soup is a crock pot recipe, it is easy to cook for dinner/lunch, or use your hands as a frozen meal.
Throw and go. Simply put all the ingredients in your crock pot or slow cooker (except cheese and other ingredients) and cook on low for 8 hours or high for 3-4 hours.
Chick. After everything is cooked, remove the chicken from the crock pot and cut into bite-sized pieces. Then add it back to the soup and stir to combine.
Can I use pre-cooked chicken to make chicken tortilla soup? Yes! If you have leftover chicken shreds or grilled chicken, you can definitely use it. Just add it to the crock pot in the last 10-15 minutes of cooking.
If you are short on time, you can make this soup on the stove top. Cook your chicken separately and chop. Put the hot sauce, broth, water, tomatoes, peppers and seasonings in a large pot and bring to a boil.
Reduce the heat and simmer for 10 minutes. Then, add the remaining ingredients (black beans and corn) and simmer for another 5 minutes. Finally add the cooked chicken and serve.

To reheat, place it in a pan on the stove and cook until fully heated, or heat a single portion in the microwave for 45 seconds until it reaches the desired temperature.

This soup is so fragrant, if you don’t want to add cheese, you don’t even need to add it! No cheese will definitely make this soup healthier. Other top-notch ideas include:

If you don’t want to buy it, you can easily make your own tortilla strips at home. Use a pizza cutter to slice your tortillas. You can fry them quickly in hot oil or bake them in an oven at 425 degrees for 10 minutes. Make sure to turn it halfway! Easy? And it’s super delicious.

- 1 pound chicken
- 10 oz can hot sauce
- 1 (14.25) ounce can chicken broth
- 2 cups water
- 1 1/2 (15) ounce canned diced tomatoes, drained
- 1/2 teaspoon onion powder
- 1 can black beans drained and rinsed
- 1 can diced green chilies
- 2 teaspoons minced garlic
- 1/4 teaspoon chili powder
- 1 1/2 teaspoons salt
- 3/4 teaspoon ground pepper
- 15 oz can corn
- 7 tortillas
Add all ingredients except cheese, tortilla strips, and avocado to your crock pot. Cook for 8 hours on low (or 3-4 hours on high).
Take out the chicken, chop it, and add it to the soup.
Add cheese before serving and put your favorite toppings on each dish (we like tortilla strips and avocado).
To make homemade tortilla strips, use a pizza cutter to slice the tortillas. Fry quickly in hot oil or bake in the oven at 425 degrees for 8-10 minutes, turning over halfway. Please enjoy!
