  • 1 egg
  • ÂĽ cup fresh spinach (10 g)
  • 2 tablespoons red bell peppers, chopped
  • Black pepper, to taste
  • Salt, to taste
  • 1 whole wheat English muffin
  • Avocado, sliced

Prepare

  1. In a medium bowl, whisk together the eggs, spinach, red bell peppers, black pepper, and salt.
  2. Heat a nonstick pan over medium heat. Place the greased Mason jar with the lid face up in the pan. Slowly pour the egg mixture into the lid. Cover the pot and cook for 3 minutes, until the eggs are set on the bottom.
  3. Remove the lid and use a fork to remove the lid from the egg. Flip the eggs and cook for another 3 minutes, until cooked through.
  4. Put the egg pie on the English muffin, then put avocado slices on top.
