Hasselback Sweet Potato Cheese + Bacon Stuffing


Cheesy Hasselback Sweet potatoes are stuffed with cheese, bacon and lots of flavor. This is one of the tastiest ways to serve potatoes.

These delicious Hasselblad sweet potatoes are a great side! If you love sweet potatoes as much as I do, be sure to try mashed sweet potatoes, sweet potato fries, or twice baked sweet potatoes.

Cheesy + Delicious Twist

I’m always looking for ways to flavor or change a recipe to make things more interesting, or just to change it up! We love cheesy Hasselblad potatoes, but I thought it would be fun to try this with sweet potatoes.

I love sweet potatoes, they taste so good! I know I need to add something to go beyond these. The cheese and bacon really did the trick. I mean, what doesn’t taste better when you add bacon? !

These are a fancy side to pair with holiday dinners or special occasions, or just whip them up at the grill and serve with a bunch of chops!

Cut, stuff + bake!

Prepare. Preheat oven to 450.

cut. Cut a thin lengthwise slice from the bottom of the potatoes so they don’t roll. Slice the potatoes sideways, not all the way to the bottom. Do this with all potatoes.

bake. Place potatoes on a foil-lined baking sheet. Brush with half of the melted butter and bake for 35-45 minutes or until soft.

thing. Open the broiler. While the broiler is heating, add the cheese slices to the other potato slices and the bacon to the other slices.

Bake + serve. Combine remaining Italian dressing and Parmesan cheese and drizzle over potatoes. Top with chives and roast for a few minutes. Service warm and enjoyable!

Tips + Variations

sweet potato– In the United States, you can find these products labeled sweet potatoes. Usually gem and garnet sweet potatoes. Outside the United States, they are called yams. Make sure they are the same size so they bake at the same speed. Also choose medium-sized sweet potatoes. Larger ones will work too, but will have to bake longer.

Here’s another way to cut these potatoes, maybe easier:

  1. Cut a thin slice from the bottom of the potato. This will provide a flat side and keep the potatoes from rolling as you bake them on the pan.
  2. Place the handles of two chopsticks or two wooden spoons parallel, leaving enough space in between for the potatoes.
  3. Place a potato between parallel spoon handles.
  4. The handle of the spoon acts as a protection, preventing the knife from cutting all the way through the potato.
  5. Cut potatoes into thin strips with a sharp knife.

Variety:

  • Use another favorite cheese such as Pepper Jack, Monterey, or Mozzarella
  • Add more flavor with garlic, oregano, parsley, salt and pepper, and more.
  • Delicious combo includes: Pecans & Maple Syrup, Cinnamon & Sugar, Garlic Herb Butter
  • plain plain butter

Storage Tips

shop Leftovers refrigerate in an airtight container for 4-5 days.

reheat: Place them in a 350°F oven until warm and crisp, about 5-7 minutes. An oven will work too. You can even microwave them, but they won’t be as crispy.
